New to using an electric stove, need some advice
My new house does not have gas, only electric. I have never used an electric stove.
What do I need to know if anything? And can I use just any pots and pans I have, such as stainless steel pots and pans, cast iron, aluminum base, etc?
Advice most appreciated!

I had electric all growing up and now we do in our house. I've never known a pot that didn't work with electric.
Just be prepared that it takes longer to cook with electric. It takes longer to heat water up to cook with, etc. And it's not the most even cooking, but once you're used to it, you'll figure out the kinks.

remember to start earlier in heating in pans and water
also you have to remove the pan from the heat at the end because the burner stays hot for a while

it depends.. is it an older style with the exposed coils? or glass or ceramic cook top?
temperature is harder to control than gas... they take a lot longer to heat up and they stay HOTTT for AWHILE after you turn it off... so moving pots around on the stove can be a pain....
with any smooth top range, you have to have direct full contact between the pot and cooking surface. some griddles have a raised edge which prevents this. this can lead to a broken cook top. It by conduction which is direct contact, and the burner keeps getting hotter and hotter if the sensors cannot "feel" the bottom of the pot getting hot.
i would not suggest using cast iron, its very heavy and hard, the slightest slip could crack glass.

If it has coils, you can't put any glass pots (I have a glass tea pot) directly on the coil. You need this little metal thingie. My teapot came with it.

My electric oven cooks everything faster.
If you are cooking meats/baking keep an eye on the time.
I usually take a 1/2 hour off meats and 15-20 minutes off baked goods.
Dont know if this is just my oven or typical of electric ovens.

If you have something that is done and you dont want to overcook it, you have to remove it to a burner that is either off or cool (common sense right?)... this is bc the burner that was used stays hot for quite some time after shutting off...
bc careful not to crack the glass by placing things too hard down on it... you have to be a bit more gentle... i continue to keep the warranty for mine in case it ever cracks bc its very expensive to get replaced...
i have a glass top and the biggest pain is cleaning it... you would think bc its smooth it should be easy right? nope, you see every tiny speck of grime on it (for me this even includes cat hair)... its not easy to completely get off burnt food and i still have yet to find a cleaner that works efficiently on it...
***** Do not EVER take pyrex out of the hot oven and place down on a cold glass stovetop... i did this at our superbowl party we hosted and the pyrex shattered into a million pieces!!! I refuse to use pyrex now to cook/bake!!!

I'm sooooo happy to be moving to gas from electric, I HATE our flat top, it's brand new and it looks like it's been scorched...I have tried every cleaner out there and NOTHING works..I've scrubbed for hours and nothing works!!! Just be as careful as possible with spills etc while ur cooking

For those that find it hard to clean the glass stop stove, get this stuff, a razor blade and a green scrubbie sponge.
Make sure that your stove is cool, squueze the cleaner on, scrub with the green scrubbie, and use the razor blade for the really stuck on stuff. The razor WILL NOT hurt the glass surface. wipe everything down with a wet sponge to get rid of all the soap and dirt, then polish with a paper towel.
its sooo easy! and the stove always looks good

When I first bought my house I wasn't thrilled about the electric stove, I always had gas stoves. I love the electric oven, it cooks/bakes more evenly. The glass top, well, I cracked it once and we had to replace it, a heavy pot slipped out of my hand and fell on the top.
I usually have a wooden cutting board around to put anything hot on it.
If you keep up on cleaning it every time you use the cook top, it's not so difficult to keep clean.

Actually, you shouldn't put hot pots on any of the burners once you are done cooking. You should put them on a trivet off the stove.
If you put a hot pot on a burner that is off if can shattered the stove top. I didn't know this and I've done it in the past, but I just read this recently. Doesn't happen often, but when it does
They are also a pita to keep clean-I use a straight edge razor and cleaner similar to the one posted above.

Like MaZz said, moving a cooked item OFF the heat... or simply rearranging the pots on the burners for access...
say for instance you have pasta boiling on the back right and you need a large frying pan you want on the front right... i would normally move the boiling water over to the back left to make room... with an electric stove you would have to let the back left heat up in order to keep the water boiling.. (and now you have 2 HOT burners)

i cant find a good pic, but on some stove top griddles the bottom outer edge is slightly lower then the actual cooking surface. if this is the case, the actual bottom of the griddle would not make direct contact with the cooking surface therefore overheating your burner.

yes either by banging or placing it down too hard... or simply over heating. cast iron also retains a LOTTT of heat.
if you were to say, slide or place a HOT pot on a cool/cold burner it can crack the glass. its called a thermal fracture... Mostly due to when there is a HUGE temperature swing in a relatively brittle material. in this case glass. the glass does not have time to slowly absorb the heat and expand evenly therefore it cracks.

also dont put a hot pot top down onto a hot glass stove top bc it will create a suction and crack the stove top.
I was told with mine to not use cast iron with it.

Honestly... when i had an electric stove I had a bad habit of putting things on it because the top was flat and I needed the space for something.
SOOO I accidentally put some items on the hot burner a few times.... and melted or burned plastic, etc.
Everyone has everything else covered....

I have a glass top, and I'm not a fan of cleaning it, but I always use cast iron, it's the only think I cook with, just be careful. Also, something you are no supposed to do, but again I do, is store heavy things above the stove, in case you drop it and break the glass.

I have an electric, but induction so my posts really won't be much use to you.
The only thing that I'm cautious about is keeping heavy objects in the cabinet above. I think it was a poster on here who mentioned she kept coffee mugs overhead (or nearby) her ceramic stove top and one accidentally fell and cracked it. I'm much more aware about those things.

I never understood it and I am in my house 10 years, but we have gas service to our house (gas heat and hot water heater), yet our stove/oven was electric. And it was an old coil top one we replaced several years ago. I now have a glass top GE Profile convection oven..
This one, but in ALL black:
While I prefer gas stoves, I've grown very used to it and love it. In the 5 years I've had it, the only complaint I have is that my large saute pan doesn't sit flat on it anymore, and has kind of scratched the glass top in a small area. It's not really noticeable unless you look closely at it. I bake a lot, so I like the convection oven part of it a lot!
