Christening Party- Food and Drinks
Our "small" celebration has become 45-50 people.
How much wine/beer/soda would you get?
What is an easy chicken dish that I can make in mass quantities? I already have famly members making stuffed shells, sausage and peppers and pulled pork (totally doesn't go, but my MIL says that's what she's going to make so whatever). I'll also have heros, tossed salad and dinner rolls. Cake, brownies and crumb cake.
For appetizers so far I have cheese and crackers and bruschetta on garlic toast.
Any other suggestions?

chicken parm or a stir fry.. I did this for a friend.. made a try of cubed chiken with a bunch of bags of the frozen stir fry veggies.. cooked and put soy sauce or teryaki (sp) sauce.

For beverages, I would get 10+ or so bottles of wine, at least 2 cases of beer and at least 10 2 liters of soda, 1 case of water and a couple of jugs of juice. With the beer and wine it will vary depending on how many at the christening are drinkers and to what extent.
For the chicken dish I would suggest a chicken marsala which is easy and delicious. I use a receipe from Lydia (From Lydias family Kitchen), it is so good.
For appetizers, you can add veggies with dip, which is easy and maybe some of those frozen appetizers from BJs/Costcos.

Chicken Marsala is SOOOO easy!!!! No frying... so quick and simple! Let me know if you want a recipe!

We usually have 6 bottles of wine- 2 red, 2 white and 2 other.
And then we get about 2-3 cases of beer. 1 of my choosing, 1 of DH's choosing and if neither one of them is a light beer choice we get a light one also.
We get about 2-3 regular bottles of soda and 6-7 diet bottles of soda(usually about 10 total).
We get the little pint size bottles of water for both adults and children- they usually come in a pack of 48 from Sam's or Costco.
And maybe one bottle of apple or white grape juice.
Our small gatherings range from 40-60 people and we usually have left over beverages.
As for a chicken dish, i'd probably do a chicken parm, just because it's what everyone in my family loves.

roast chicken parts in the oven.
toss them with olive oil, garlic, salt, pepper, stick them in the oven and walk away. so easy!!!!!!

SOLD on this! Thanks! Do you have specifics as for time/temp?
As for the beverages-
I'm thinking
4 bottles pinot grigio 4 red (I'm not a red drinker- which should I get?) 4 white zinfandel -or- I could do a champagne punch...instead of the zin-
I bought a case of water already from costco
6 bottles diet coke/pepsi 6 bottles regular coke/pepsi 4 bottles sprite/ 2 ginger ale
I will definitely do veggies and dip and put out some pretzels.

Re: the red wines we got these big bottles of Mondavi (1.5L)from the wine store: 1 Chianti 1 Pinot Noir 1 Cabernet
The Chianti went first (to my surprise) everyone loved that one the best...I personally liked the cab but the chianti was really good too.
