noodles are the things in a kugel or casserole, macaroni usually has mayo or a cheese sauce, and everything else is pasta

I am first generation American - both my parents were born and raised in Italy...I know it as pasta.
We also say sauce (or sugo) not gravy. When I told my mother about how some people say gravy instead of sauce, she said
"gravy like they putta on a turkey?"

usually I call it "pasta" now, but sometimes I say "spaghetti" even when it's a different type of pasta because as a kid, my mom would say "we're having spaghetti for dinner" even if it was ziti or a different type.... so I'm in the habit of just saying spaghetti.
it's all spaghetti to me

I agree! It is kind of like how "gravy" is an Italian American thing but "sauce" is an Italian thing. LOL
There are also a lot of regional differences in Italian food & dialect, so it could stem from that as well.
I'm from an Italian American family (my grandma was born here, grandfather came as a child) and we call it macaroni, but we say sauce, not gravy!
It even says "an enriched macaroni product" on some "pasta" packages.
I do say pasta now in "public". Noodles however, are egg noodles, like the kind you serve with stew.

I am Sicilian.
We call it macaroni.
Pasta is only reserved for "pasta salad".
It is, and always has been, macaroni in our family.
