dinner is cooking!!! fall off the bone yummy ribs are in the slow cooker... I will make roasted broccoli and homefries with it!

Breakfast for dinner!
Homefries w/ lots of caramilzed onions, Crispy Bacon, Asaparagus Frittata w/ homemade bisquits w/ Coffee and Orange Juice Spritzers.
Dessert is thin Pancakes w/ Caramalized Bananas and fresh whip cream & Hot Cocoa.

I would like to go out to dinner, but DH and I have been feeling very cozy lately so I might make something really yummy...I printed out a bunch of recipes.
Tonight: Stuffed Peppers
Tomorrow: Parmesan Corn Chowder, cheddar chive biscuits, choc.chip cookies
Sunday: Crockpot italian beef sandwiches and appetizers for the game

I think I am going to make veal cutlets for DH and some pappardelle with a creamy sauce (TBD which kind exactly...)for us both. I will throw some articokes, peas, maybe olives into the pappareldelle

we had a simple fish chowder with cod last night. the other only way I make it is fried. help me out with a third "go to"!

Yes Since my DH has been working 17 hour days lately. I'm pretty much making this feast for me, my 3-year old and the 4-year old I babysit  There will be plenty of leftovers

Simple, simple, simple!
Take thick center cut pieces of cod and squeeze lemon over them. Season with s&p.
Get some grape tomatoes and toss them with a little olive oil and kosher salt.
Meanwhile get an oven safe pan HOT - super hot - with a little olive oil in it. Put the cod in the pan (season side down) and let it cook for about a minute. Add the tomatoes to the pan and cook for another couple of minutes. DO NOT MOVE THE FISH. Transfer to your preheated oven. Let it cook until the fish flakes (maybe 5-7 minutes?). Remove from oven and use a spatula to take the fish out and flip it onto plates. It will be a gorgeous golden brown on the bottom. The tomatoes will be all roasted sweet goodness and will have popped open. I do a quick saute of spinach with garlic and lemon as a side and sometimes a little brown rice, quinoa or orzo cooked in chicken broth if I feel like a starch.
