Re: What is/was for Dinner tonight?

quesadilla.

I came home this week, but my parents aren't home - and my mom left a really random assortment of stuff.

And I'm too lazy to actually go shopping and cook something for myself Chat Icon

Re: What is/was for Dinner tonight?

Chicken breasts marinated in toasted sesame oil & Emeril's Essence also grilled bell peppers (red & green)

Also, last night I made a pot of meat sauce - I had defrosted the meat and had to make it - I was dying in my kitchen all night frying meatballs, pork ribs & sausage! Anyway, 3 hours later and yummm! At least it's made, separated into smaller containers and frozen for future easy pasta nights! But I was kicking myself last night over the stove!

Re: What is/was for Dinner tonight?

Danielle Made Cheese Burgers on the Barbque, and I made fresh green bean salad and stir fried mushrooms and red peppers with garlic powder, salt, pepper, and oil.

Danielle's mom made her famous salad with romaine, oil, balsamic, walnuts, cranberries, and feta all tossed together.....

Yummy and soooo filling.

Love low carb.

I am down 6lbs my first week

THANKS ... I LUV to Cook!

STOP & SHOP
I found it in two places - the International Aisle (near the asian/thai section) and the Baking/Oil Aisle (above the Olive Oil). There is also grapeseed oil, peanut oil.

They have 2 different types of sesame oil. I usually buy the one that looks like olive oil in color. It's very good and flavorful but I just bought the toasted one - it's very dark in color (caramel colored) and OMG, it is sooooo much better. It's expensive but you only need a little to go a long way. I especially use it with garlic when I sautee veggies - YUMM - my DH who hates veggies will eat any veggie I make if I sautee garlic in sesame oil and pour over steamed veggies.

brown rice made with Chicken Stock and sauteed garlic

Elbee can you give me the recipe for your rice dish...sounds good...

Ina medium sized pot - Saute some chopped garlic (1 - 2 cloves, depends on what you like) on low heat in oil (olive, sesame, peanut - whatever you want) until garlic is soft & clear, not brown& burnt.
In a measuring cup, pour 1 can of chicken stock then fill the rest with water to get to 2-1/2 cups of liquid.
Pour into pot with the sauteed garlic and bring to a boil.
Slowly add 1 cup of brown rice, stir and bring back to a boil then lower to low/medium heat and simmer for 45 minutes (or until done).

You can also add onion and chopped spinach and sautee then add liquid & rice as above for even more flavor. That's yummy. Chat Icon
