I usually make a pot roast, but this year, we are going out for Linner @ 3:00. Just need to not have stress this year.

We decided on the Cooperage Inn Restaurant in Baiting Hollow for early dinner. It's just the 3 of us and we were going to be out east anyway.

I'm helping my mom make:
Lasagna bolognese with beschamel
Spezzatino di Vitello - which is an Italian veal stew that is cooked slow and low with red wine.
bunch of sides.
I wish my mom would go out but she is old school Italian and would rather cook than spend money to eat out.

I decided to switch it up this year. I am making Corned Beef and Cabbage. Yes, I am not making it tonight; and instead, will make it in another week from now.
It should be nice for a change; otherwise; its always the usual; pastas, meats, etc. Done with it all.

We have lots of people so.........
Apps: stuffed mushrooms, fried artichokes, rice balls and charcuterie/cheeses, or sometimes prosciutto and melon, also the classic Pizza Rustica and marinated eggplants, giardiniera and mozzarella/burrata
Pasta: lasagne bolognese or pappardelle with lamb sugo (mom will make this, not sure yet)
Main: roasted leg of lamb, roasted potatoes, potato croquettes, artichokes, sweet potatoes, asparagus, a green veg. And veal cutlets or chicken cutlets for the people who don't eat lamb.
Dessert: Ricotta cheesecake, Italian grain pie, colomba di Pasqua, and I always make a lemon meringue pie

What are you making for Easter?
Going to my aunts. Bringing an appetizer (taco dip) and veggies.
We do a potluck so everyone brings something. Main dish is always ham with a bunch of sides..lasagna, mac and cheese, etc.
