What am I doing wrong? Chicken Cutlets

When I make chicken cutlets they seem to come out wet and greasy. You can't taste the breadcrumbs, just the wetness Chat Icon

I dip them in egg & breadcrumbs. I put in olive oil, turn the heat up high and put the breaded chicken in. I turn it down after a bit, turn them here and there and cover it.

Why do they come out wet? Could it be that I am covering it? Is that keeping too much moisture in?

Help!

Exactly. The cover keeps steam in and makes them wet.

What I do is:
Coat in Wondra Flour (with pepper)
Dip in a beaten egg
Coat in bread crumb mixture (bread crumbs, italian seasoning, onion powder, garlic powder)

In a pan I put enough oil to coat the bottom of the pan (the oil should not cover the top of the cutlet). Make sure the pan is now sizzling hot and reduce the heat to medium. Gently and carefully place some breaded cutlets into the pan. They should not touch each other.

KEY POINT: Set a timer for 3 minutes and don't touch them.

After three minutes. flip and do it again for three minutes.

If they are thicker then they may need a minute or two more.

Put them on a paper towel covered plate to absorb excess oil. Make the next batch.

Do not cover them with a lid.

I think it might also be the temp you are putting them in at. What temp do you do? I usually do 400 for 20 minutes on thin cuts.

make sure you drip off the excess egg and NEVER COVER!!

try vegetable oil. It has something to do with the smoke point, not really sure exactly, but I switched to vegetable oil for the cutlets and mine are a lot better than they used to be

I only use enough oil so that it fries one side at a time. The cutlet is not submerged in oil. I turn half way through cooking.

And yes, never cover the pot.

I agree with the others....
1. Remove the cover.
2. Try vegetable oil, it has a hotter smoke point, thus you will be cooking the chicken at a higher temp and then it shoudl be less gressy.

Def don't cover it, I wouldn't start the temp high and then lower it. I put it on Med and leave it there.

Also, only turn them once.

As everyone mentioned the cover as well as don't flip them over more than once. Let one side cook and then the other...

are you giving the oil time to get nice and hot before putting the chicken in? I also agree with the covering.... that would definitely make them mushy!

That was my problem in the beginning, too. I didn't let the oil het up enough. And no cover!

I do the exact same thing and they come out perfect.

I use olive oil to fry chicken cutlets and they come out fine. I really think it's the covering that is causing the coating to become soggy for you.

I always use olive oil and it's never a problem. I think covering is most of your issue, plus it sounds like you are adding the chicken right after you add the oil? You need to give the oil a good 5-10 minutes to heat up first. And I never do cutlets above medium heat.
