*Weekly Menus - 11/12
Sat - chicken shawarma on homemade naan
Sun - penne a la vodka with homemade garlic knots
Mon - crunchy lemon chicken with macaroni salad and biscuits
Tues - carne asada with rice and sliced avocado
Wed - roasted chicken thighs with potatoes and mushrooms
Thurs - italian wedding soup with crusty bread
*also making blueberry buttermilk scones for after church

Hayley's are probably real and waaaaaaay better.
I got pizza dough from Sal's I rolled it out into a giant rectangle and cut into strips and then made knots.
MEANWHILE.. I heated some oil on the stove and added a pinch of salt, a hellalot of fresh chopped garlic and a lot of fresh chopped parsley. Then I rolled the knots in the oil and baked them in the oven. When they were done baking they took another bath in the garlic and oil. Then I finished with a quick grate of Reggiano Parm over them and garnished with a little fresh chopped parsley. Yum!!

I have a short week this week.
Saturday - we ordered Chinese
Sunday - homemade margherita pizza on whole wheat crust (never made last week)
Monday - citrus marinated baked fish (salmon for DH, tilapia for me), wild rice, roasted broccoli
Tuesday - pasta with sausage and broccoli rabe
Wednesday - ILs arrive from Florida - roast whole chicken with lemon and rosemary, roasted brussels sprouts with crispy pancetta, PW's rosemary rolls
Thurs/Fri - out
I also made blueberry muffins yesterday.

I tweak it a little each time I make it.
I put my rice in a bowl with chicken stock and saffron threads and let it sit while I get ready for it.
I use good quality chorizo and render it in a dutch oven. I remove the sausage and add a little bit of olive oil.
Dredge the chicken in flour that has been seasoned with some salt, pepper, some onion powder, some granulated garlic and a little pinch of cumin.
I brown the chicken pieces on all sides so it's nice and golden. I've used all different cuts and sizes but this week I'm doing thighs and legs. You aren't cooking it through.. just browning it at this stage. Remove the chicken and add a few Annato seeds for color. After you get a nice red color going, remove whatever is left of the seeds before making the sofrito. If you don't have the seeds you can use Sazon.
You then make the sofrito in that base. If it's a little dry I add in a bit more olive oil. Stir in chopped onion, minced garlic, diced green and red pepper, chopped tomato, parsley and cilantro. Cook for a few minutes to soften.
Put the chicken back in, add a can of whole tomatoes (I crush them with my hands as I put them in). Season to taste with a little salt, some cumin, garlic powder, onion powder, some paprika and a little pepper. Put the chicken back in - let it cook through. Take the chicken out and then I dump the rice with the chicken stock into the mixture, add a bottle of pilsner and give it a good stir and turn the heat up high until it boils. Turn down the heat, return the chicken and the cooked chorizo, cover and let simmer until rice is done. I like it so it's kind of thick and creamy - not dry and fluffy. You can control the texture with the amount of chicken stock you use with the rice!
In the last 10 minutes you can add a bag of frozen peas and some nice fresh roasted pepper to make it pretty.
I don't think this is 'authentic'.. but it works for our family!

Sunday- Pioneer Woman's roasted chicken with string beans.
Monday- Fresh shrimp and mushroom ravioli (I just bought a pasta machine and I've been making tons of fresh pasta)
Tuesday- Chicken pot pie
Wednesday- Steak au poivre with broccoli
Thursday- Pumpkin seed crusted fish with a veg.
Friday- out
It's tentative. I always change up the days or don't make something. I do shopping every day to every other day...

Mon.- Homemade chicken soup with baby bowties and grated romano cheese with garlic cheese crescent rolls.
Tues.- Late night at work- dinner out
Wed.- Braised pot roast with onions, carrots and red wine with mashed potatoes
Thurs.- Out again
Fri.- pizza night

I used a recipe I found through Pinterest!
You basically marinate the chicken for a few hours in greek yogurt, lemon juice, garlic & spices (they recommended cinnamon, cloves & nutmeg) then grill. Slice and serve in homemade naan wraps with romaine, cucumber, tomato. I also made a quick sauce (greek yogurt, lemon juice, garlic & fresh dill).
For the naan...
Mix 2 tsp dry active yeast with 1 tsp sugar and 1/2 cup of very warm water. Let sit until frothy. Add 1/4 cup vegetable oil, 1/3 cup greek yogurt & 1 egg and mix to combine.
In separate bowl, combine 1 cup flour with 1/2 tsp salt. Add wet ingredients and stir until well combined. Continue adding flour 1/2 cup at a time until you can no longer stir it with a spoon (for me, I added about 1 more cup of flour).
Turn out onto well floured surface. Knead until dough is smooth and soft - NOT sticky (keep adding flour as needed... I probably used another 1/2 cup at least here).
Loosely cover and let rise for at least 45 minutes (I let mine rise a few hours because I wanted to get it done during nap time). Then flatten and cut into 8 pieces. Shape each into a small ball with a smooth, round top.
Heat skillet over medium and spray with nonstick spray. Roll out 1 ball at a time (wait until right before ready to cook) until about 6 inches in diameter. Place onto hot skillet and cook until big bubbles form. Flip and cook other side until golden brown.
YUM! They were really good and Loey even said "Good naan mama"

Crispy Honey Chicken over brown rice (missfabulous posted the recipe on here, so i"m trying it, it looked so good!)
I don't plan for specific nights...just depends on how much time I have to cook each night and what I feel like making!
Also will be baking Farina Muffins this week! So delish!
