I usually say How adorable/cute and then go and talk to the baby (like "hel LO")
I'm an atheist and I am never offended when someone thinks/says something nice to me or my children (isn't that what a prayer is? nice thoughts? positive thinking has its merits) I would be offended if someone grabbed my hand and asked me to pray with them - but that's never happened yet.
I say Gesundheit when someone sneezes. It's like Salut - "Good Health" (read: I hope you are not getting a cold)
and I do thank a person if they have responded to my sneeze in any words)

It would not offend me at all, I think that is a wonderful sentiment. 
I agree, and I usually say the same because my mom says God Bless all the time when she ends a conversation with someone.

Yes I am Latina, so my mom always told me that if you dont say God Bless them the parent may think you are giving the child the evil eye. I tried to explain this to DH and he thinks we're nuts. She got this from her mother etc.
 Same here.
I used to say "god bless..", but now for co worker or others I will just say bless him/her.
Unless your god is the devil and you are wishing my baby to go to hell, I will not be offended.
