Quick dinners while pregnant
I'm sure lots of us feel the same way right now but the last thing I want to do is spend lots of time in the kitchen!! I'm 31 weeks prego with and I'm on "strict bed rest". I can't stand for long periods of time but...my husband and I need to eat!! Ordering in is getting very expensive. What are some of you cooking these days??

Mostly stuff on the BBQ. Since DH does the BBQ'ing in our house, it has now become his job I will make very easy side dishes...fries, mac & cheese, Liption packages, stuff like that.
I am so done with cooking...and don't get me wrong, I love to cook...but I am just done for now

I'm so thankful for Peapod...food shopping hasn't been easy. It would be so great if we could all share one of our "quick and easy dinners" to get us through our pregnancies!

Yea we've been doing the Panera/Cosi/Diner take-out route because there are more healthy options... but I'd love a good homemade chicken cutlet!! It's hard with me being exhausted all the time and my DH's work hours!!

I make a lot of Trader Joe's frozen meals...they're relatively inexpensive and healthy as far as frozen goes with no preservatives and low sodium. Last night I made their cheese and bean burritos and taquitos, I throw them in a casserole and open a jar of tomato sauce, put some chili, cumin, and paprika on it, and top with shredded mexican cheese and throw in the oven for a half and hour, and make a pot of yellow rice and beans to go with it, one of my simpler meals.
Also chicken fingers and fries, pulled pork or brisket sandwiches with fries or onion rings, chicken sausage and cous cous, always with a salad...those all are pretty much heat up and it's ready type dinners from Trader Joes.

tacos
ravioli (or any type of pasta) with meat sauce (i use jar sauce with fresh browned ground beef)
i have been cooking boneless chicken breasts chopped up into chunks various ways with EVOO on top of the stove in a pan and then adding various sauce or mix in to make it different through out the week (add frozen veggies, bbq sauce, balsamic vinegar and tomatoes over whole wheat pasta, with tomato and avocado and ranch dressing, etc...)
sundays i make something big like shepherds pie, stew, chili, etc...
burgers
breakfast for dinner (scrambled eggs, waffles, pancakes)

I have been going to a great market and getting good meats. Chicken sausage with onions and peppers on Italian bread, chicken burgers with feta and spinach. Toss a nice big salad and voila! lol

I'm the queen of quick meals.
-Hamburger helper -There's a kikoman packet by the Chinese food stuff in supermarket beef and broccoli seriously takes less then 20 Moin its home made Chinese food. And a bag of jasmine rice ( that's the kind you get at the take out place) -tacos with goya yellow rice or my moms taco salad ( make taco meat. Make a salad lettuce tomato cheese olives onions and smashed up tostito chips, put tacos meat in the bowl with salad mix and add a bottle of catalina French dressing mix and eat with chips) - Rachel rays 30 min shepherds pie this is the best ever I have a few ways to make it a 15 min meal if you want to know ask - hamburgers and French fries - Costco/ Boston market roasted chicken make mashed potatoes and corn - homemade sauce. Can do 4 things from one pot 1. Ravioli 2. Baked ziti 3. Vodka sauce 4. Stuffed peppers- I make a modified version since dh hates too much peppers. 2 large green peppers cut cleaned and sliced into bite sized pieces.1lb chopmeat can use turkey or beef. Cook the meat all the way through. In a pot on the side make 4 servings of min rice. Drain the meat and add the completely cooked rice. Then add the sauce starting 1cup at a time. Until moist not soupy add he green peppers and put the lid on the pot so the peppers steam.

my friends love me I always have quick ideas I love to cook but with an almost 2 yr old and no energy things need to be quick. And I cook almost every night.

I've been doing a lot of BBQ'ing lately which isn't very time consuming! I'll also make a large quantity of sauce and meatballs for Sunday dinner then freeze half of it and use it for another meal during the week for a day I don't feel like really cooking. Or I'll make a large quanity of chicken soup in the crock pot and freeze half and same thing leave it for another night I don't feel like cooking! Taco's and Fajita's also don't take long to cook!

One of my specialties is lemon chicken...I think my husband would eat it every night if he could. Dip 4-5 thin chicken cutlets in egg then flour. Cook in a skillet with oil until lightly brown. In a small saucepan, bring 1/4 stick of butter, one cup of chicken broth, 2 chopped garlic cloves, 1/2 lemon (squeezed) and 1/3 cup of white cooking wine to a simmer. Place the chicken in a dish and pour the simmered mixture on top. Cover and cook for 30 minutes in the oven at 375. Serve with egg noodles. Heavenly! So easy and quick!!
Are any of you big Uncle Giuseppe's or Iavarone's fans?? I'm waiting patiently for the new Uncle G's to open up in Massapequa...I heard that they hope to open in time for Memorial Day!!

Definitely lots of Trader Joe's meals. Also, quick burger on the grill. We also make a pot of suace on Sundays and use it for at least 3 meals (regular sauce 1 night, sausage and peppers or homemade pizza another night and penne vodka night #3).

I have a quick one that I made last night:
Sausage Pasta: 1 package of Italian Turkey Sausage (hot or sweet, whichever you prefer) 1 Red Onion Sliced 4 cloves of garlic minced 1 large can of Crushed Tomatos 1 can of Paste Dry Basil (to your liking) 8oz Rigotta Cheese 1 box of Pene
In a pot brown sausage and add red onion slices til soft.
Add garlic
Add Crushed Toms, Paste and Basil
Cook together til Pene is done
Add Rigotta to sauce and mix, add pene.
Done
YUM!!! Makes quite a bit so it will last a few days.
