My kid hates eggs.....
And I feel like I am at a loss for breakfast. I am great with lunch and dinner ideas...but breakfast, not so much!
Typical morning:
Puffs or Cheerios as an appetizer
French toast or Fruit w/Oatmeal mixed in
Milk
Sometimes berries
He does not like pancakes at all.....waffles on occasion. I usually make an entire loaf of french toast and freeze it and then I alternate the fruit/oatmeal with the french toast. Any other ideas???
I have tried eggs every way...he puts them in his mouth every time and then politely just lets them fall out. He is not a picky eater for the most part. But eggs are just not for him I guess!
Also, He usually gets yogurt with his lunch so I don't want to overdo the yogurt!

I had same problem.. last weekend I tried and egg and cheese quesidilla.. he goobled it up!! didn't even notice the egg!!

I only sometimes give DD "traditional" breakfast foods (eggs, pancakes, french toast).. she often gets broccoli, whole wheat pasta, cheese and other lunch/dinner foods... I figure, why not? I'm not a big breakfast food person and many breakfast foods aren't that healthy anyway...

My DD gets oatmeal with fruit almost every day. Just like me! I just switch up the fruit every day so she gets some variety.

My ds hates eggs too. I usually do fruit and english muffin with cream cheese or butter, sometimes cereal if I am in a hurry.

Sounds like a texture thing to me. Everything you listed has some crunch too it.
I wouldn't worry about the eggs. If you're making french toast, he's getting the egg in that.
My DH tried different kind of eggs until we figured out one that my son would eat (he likes it on toast). Also not sure how old your son is but once the kids got involved in cooking, the eating became easier.

yogurt (switch out the yogurt in the afternoon with a string cheese or applesauce)....
bagels (em has become obsessed with cinnamon raisin mini bagels - we can no longer get in the car to go to the sitter's house without a bagel, she'll FREAK)...
