Can you live on 1 income?
if you or your SO lost your job today (GOD forbid), would you be able to live on 1 income?

Yes, but we are a bit older, don't have a crippling mortage, student loans were small and paid off years ago and we've never had a car payment.
Our first home was purchased in 1998 and appreciated to triple its original value by the time we sold it.
We have a much smaller mortage payment than if our current home was our first real estate purchase.
If we were in our twenties with all of the above variables, no we couldn't.

On mine? No.
On Dh's? Yes.
But, even if DH lost his job(s), we have enough in savings to get by for 2 years. If we lost both of our jobs, we have enough in savings to cover ourselves for one year.

No--and we don't even have a lot of expenses. No car payment, no loans or debt other than the mortgage for our co-op.
We do have savings, though.

No, we can't live on 3 incomes, no less one 
DH works a lot of hours, I have 2 jobs and I do eBay selling on the side and most months are bad at the end

and we wouldnt be having much fun, but we would be able to pay our mortgage, bills and eat.

same here. our CC bills are the reason we both have to work. when those are paid off we can afford to have me stay home, but i wouldn't choose to. DH will always make more than me.
