***** menus 1/22 *****
Sunday- Steak au Poivre ( didn't get to short ribs this week, so I'll do them next week
Monday- skinnytaste Asian pork with mushrooms in crock pot
Tuesday- pumpkin chicken madras curry
Wednesday- skinnytaste cabbage casserole
Thursday- skinnytaste Greek turkey meatballs
Friday- prevention rd's baked Dijon Salmon or another fish. Tried this recipe last week and it was sooooo yummy! http://www.preventionrd.com/baked-dijon-salmon/
Saturday- skinnytaste Italian turkey meatball heroes
Sunday- pioneer woman short rib or braised duck legs

Friday: Green Curry Shrimp with Mixed Vegetables and Jasmine Rice
Saturday: Indian Beef Patties in Tomato Sauce, Green Beans, and Basmati Rice
Sunday: Baked Herb Salmon, Steamed Broccoli and Cous Cous
Monday: Shrimp Leftovers
Tuesday: Beef Leftovers
Wednesday: Grilled Chicken Sandwiches and Chips

Mon.- Shredded chicken, lime rice and black beans
Tues.- Pan fried or flounder oreganata with brocolli and mac and cheese
Wed.- Pork chops with dijon herb sauce, roasted brussel sprouts and baked potatoes
Thurs.- Salmon with dill sauce, spinach and baked rice with peas
Fri- Take out

Sun - cabbage salads and italian combo heroes
Mon - sexy joe's (healthy version of sloppy joes's)
Tues - chicken stirfry with brown rice
Wed - taco night! taco meat with all of the toppings
Thurs - buffalo chicken salads
Friday - hamburgers (unsure about a side dish so far)
Sat - hopefully out for greek food

Mon - Chicken Sausage over spinach with sun-dried tomatoes and feta cheese
Tues - Roasted Veggies over pasta
Wed - Stuffed Peppers with Shrimp and Beans
Thurs - left overs
Fri - out for dinner
Sat - most likely out

Sat: Meat Pie (Meatloaf in a pyrex pie plate topped with corn and mashed potatoes and baked all in one dish)
Sun: Dh's famous Country Pork Ribs, cole slaw & baked sweet potato
Mon: Baked Ziti & mini meatballs with salad and garlic bread. (DH has this bright idea to make it with Vodka sauce, so the jury is out...not sure if this is genius or going to be an epic fail lol)
Tues: Baked Tilapia for us, Praeger's Fishy Nuggets for the kids, Mac n Cheese, and steamed veggies
Wed: BBQ Steaks, Baked Potato, & burnt broccoli
Thurs: leftovers
Fri: Pizza/take out

Tuesday: Zucchini Soup, going to add chicken sausage for more protein

Thanks - I just kind of make things up. I take inspiration from Food network shows and cookbooks.
I pretty much just throw it all together and add a lot of seasonings.

Sunday - my Dad's birthday - roast loin of pork, fried potatoes and onions, red cabbage, applesauce, birthday cake
Monday - grilled burgers with caramelized onions, sweet potato fries, buttered baby peas
Tuesday - spinach and mushroom baked ziti
Wednesday - baked chicken nuggets, wild rice, roasted veggies with balsamic glaze
Thursday - I'm out, leftovers for DH
Friday - DH is out, WW bubble up pizza for me and the kids
Saturday - out
Baking this week - banana bars with cream cheese frosting, birthday cake (vanilla cake with chocolate frosting)

I make the Greek meatballs often and I love them! I serve them with some yogurt and a veg. I haven't made the pork yet and tomorrow is the first time. I'll let you know how it turns out.
