10/10 Wins! This Week's Menus anyone?

Edited because my husband loves to eff with my flow..

And again because I screwed up my calendar...

Sunday: MIL's house

Monday Pot Roast, Roasted Veggies and Biscuits (Made Sunday but bumped by Rob's love of roast chicken.)

Tuesday: CHINESE TAKE OUT!!

Wednesday: Texican Pizza

Thursday: Wakey-Wakey Eggs and Bac-y (Soft Boiled Eggs with Soldiers, Herbal Tea and Bacon)

Friday: Sweet 16 Party

Saturday: Wildlife Event and then Out to Eat.

I haven't really been participating because:

A) my parents like to order in/eat out A LOT

B) I'm dieting, so my menus are BORING

C) I've been working late Tues/Thurs nights so my dinners are severely lacking those nights!

Anyhoo, here's this week's not-so-fun menu (I'll only give the nights I'm cooking)

TUES - BBQ chicken, coleslaw, steamed broccoli

WED - Sundried tomato, basil & mozz turkey burgers, steamed veggies

THURS - Italian chicken and stuffed portobello mushroom caps, salad

I haven't been sharing lately because we have been away most weekends this fall and we didn't have any food - finally went shopping yesterday and now I have a happy and full freezer...

Sunday - pork roast, brussel sprouts, acorn squash

Monday - Stuffed Cabbage and cabbage noodles on the side

Tuesday - Sloppy joes and roasted asparagas

Wednesday - leftover pork, roasted squash, steamed broccoli

Thursday - Date Night?

Friday - Oven baked turkey, veggies on the side not sure what yet

Saturday - probably will go out

Tuesday - Turkey Chili, with guacamole, sour cream ...all the fixings
Wednesday - keilbasa with perogies and sauerkraut
Thursday - take out or leftovers for DH -I have a yoga class
Friday - homemade pizza on the bbq, salad

Tuesday: Split Peas soup and crusty bread (didn't make last week)

Wed: Bone in Turkey Breast and thighs in the slowcooker, roasted fingerling potatoes, mushroom and spinach stuffing

Thur: Leftovers or take out

Friday: Cuban red beans and rice, pork roast with mojo, salad

Not feeling anything this week! Anyway, as of now:

Mon.- Out east all day prob take out

Tues.- manicotti, meatballs, salad, crescent garlic rolls

Wed.- Dinner at parents

Thurs.- marinated pork tenderloin, pierogies, creamed spinach

Fri.-Black bean and pork slow cooker chili

Yup...it is my first attempt at the springrolls and chicken though Chat Icon Chat Icon I got the recipe from Allrecipes but I am going to try to lighten it up by using less egg or whites, and doing a shallow fry instead.

4 cups vegetable oil for frying
3 eggs
1/2 cup cornstarch
2 teaspoons cornstarch
2 pounds skinless, boneless chicken thighs, cut into bite-sized pieces

1 1/2 cups white sugar
1/4 cup distilled white vinegar
1/4 cup rice vinegar
1/4 cup dry sherry
2 1/2 tablespoons soy sauce
2 teaspoons minced garlic

2 tablespoons vegetable oil
12 dried whole red chilies, or to taste
2 tablespoons minced fresh ginger, or to taste

Directions

1.Heat the frying oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

2.Beat the eggs in a mixing bowl until smooth. Mix in the 1/2 cup plus 2 teaspoons cornstarch until no lumps remain. Mix in the chicken until evenly coated in the batter.

3.In batches, carefully drop the chicken cubes into the hot oil one by one, cooking until the chicken turns golden brown and begins to float, about 3 minutes. Drain on a paper towel-lined plate.

4.Meanwhile, combine the sugar, white vinegar, rice vinegar, sherry, soy sauce, and garlic in a small saucepan. Bring to a boil over medium-high heat. Stir constantly until the sugar has dissolved and the sauce thickens to the consistency of light pancake syrup, about 3 minutes. Remove from the heat and keep warm.

5.Heat 2 tablespoons vegetable oil in a wok or large skillet over medium-high heat. Stir in the dried chiles and ginger; cook and stir until the ginger begins to brown, about 30 seconds. Remove the chiles and ginger from the wok and stir them into the sauce. Place the fried chicken cubes into the wok and cook until very crispy and dark golden brown. Serve the chicken with the sauce.

Emerils Veggie Egg Rolls

2 tablespoons sesame oil
2 tablespoon canola oil
1/2 head green cabbage, shredded
1 cup julienne carrots
1 cup julienne snow peas
1 tablespoon corn starch
1/4 cup soy sauce
8 egg roll wrappers
Peanut oil, for deep frying
1/4 cup dry mustard
1/4 cup water
Cilantro leaves, garnish

In a skillet over medium-high heat, heat the sesame and canola oil. Saute cabbage for 2 minutes. Add carrots and snow peas. Cook an additional 1 minute.


Whisk together cornstarch and soy sauce until smooth. Stir into vegetable mixture. Cook until sauce comes to a boil and is slightly thickened, about 2 minutes. Remove from heat and cool.


Lay the egg roll skins on a flat surface and lightly brush edges with water. Place 1/8 of the filling at one end of each skin, leaving a 1/4-inch border at the top and sides. Roll wrapper over filling, tucking in the ends after the first roll.


Heat 3-inches of peanut oil in a large, deep saucepan. When the oil is hot, about 350 degrees F, fry the egg rolls until golden brown, about 2 to 3 minutes. Remove from the fryer and drain on paper towels. Season with Essence.


To serve, slice each egg roll in half, diagonally and place on each serving plate. Combine dry mustard with water. Drizzle each egg roll with the hot mustard. Garnish with cilantro leaves.

SUnday - panseared chilean sea bass, mushroom risotto & sauteed spinach

Monday -grilled strip steaks, grilled broccoli & leftover mushroom risotto

tues - Porkloin with apples in the slow cooker, mashed potatoes and broccoli rabe

wed - leftovers

thurs - friend flounder, noodles, salad or frozen veggie

friday - dinner out

Sat - dinner at mom and dad's

sunday: homemade chicken soup with tortellini, chicken sausage

monday: on my own, either leftovers or shirataki noodles

tuesday: Peanut Noodles with Shrimp - going to try it with shirataki noodles so it's healthier Chat Icon

wednesday: slowcooker chicken taco chili

thursday: turkey stuffed peppers, salad

friday: out
