chicken for buffalo chicken dip
What kind of chicken do you use? can you use a rotisserie?
Do you chop the chicken in a chopper?

I do the same thing - I usually poach it in enough water to cover the chicken and throw in a bullion cube for some flavoring.
You can use rotisserie, but make sure it's plain - not bbq'd or anything.

I use rottiserie and I love it!! I just shred it by hand, you can certainly just use a chopper but i like longer thinner strips so I just take it piece by piece and shred the chicken by hand. DELICIOUS!

I spice up and grill chicken tenders (outside if nice out or in grill pan), then pulse them in the food processor to chop it up.
I think rotisserie chicken would be great too!

Rotisserie is the best, I think. It gives a really nice "wing flavor." I cut it up.

not sure if its the same one the OP uses, but i use one from Franks Red Hot (on the site or on the back of their bottle)
its cream cheese on the bottom and then you mix either ranch or blue cheese with the hot sauce and chicken and put that on top. you can add crumbled blue cheese or shredded mozzarella on top if you want. then cook it til bubbly

Fresh chicken is better, but you can use canned chicken and save some effort. Once it is all mixed in it doesn't really matter.
