Making macaroni and cheese the day before..
I usually make my mac and cheese the day I'm serving it. I'm making a tray on Thanksgiving and a second tray for my husband's job the next day. Should I assemble, bake it, and refrigerate the day before and then heat it up the next morning or assemble, refrigerate, and bake the next morning?

I would assemble, refrigerate, and bake the next morning. I feel like baking it the night before will dry it out.

I would do it the day of because mac and cheese has a tendency to dry out when reheated. What I do is I make the sauce and pre-cook the pasta and the day of mix it all together and throw it in the oven.

I would just cook the pasta the day before, Mac and cheese gets weird
