I want to have some meals on hand that I can just defrost/heat up... Anyone else doing this?

What kinds of things are you making/freezing?

I didn't think of that! I was planning on using my crock pot to make some meals.

Re: Is anyone stocking the freezer with meals for when LO arrives?

im going to ask a silly question but when you're ready to eat these freezer meals, #1 how do you defrost them? #2 do they taste any different then if freshly made?

sorry if stupid, i just never froze my meals before and it sounds like a great idea, so i was curious

take them out the night before or microwave or put in the oven to reheat..

they still taste fine,, and believe me.. you wont care at that point...you'll just be happy to get something of substance in your mouth.

Re: Is anyone stocking the freezer with meals for when LO arrives?

Sad to say but I have no idea how to make sauce lol!

I can use my crockpot but I know me... and if it's not already made/put together and super convenient, Im going to be eating $hit when Im stressed/sleep deprived/etc... plus having a homecooked meal is going to be so nice in a time of pure chaos.

so I will def make lasagna/ziti
I have a good recipe for split pea soup
since it wil be fall, ill probably make some type of butternut squash soup
Chilli

And the rest Im going to have to depend on the generosity of friends and family ;)

i did this and 4 months later I'm just using up the last of my meals (eating some right now for lunch!) I did english muffin pizzas and mexican pizzas for easy lunches, lasagna, meat sauce, the ingredients for beef goulash to throw in the crockpot, chicken chili, beef chili, burrito pie, enchilada casserole, and santa fe chicken. Also, my IL's gave me a big batch of ziti and their leftover easter ham which I threw in the freezer. It's been a huge help to have homemade meals ready in minutes and little to no clean up.

different sauces (meat sauce, vodka sauce, etc) so my husband can just make pasta and defrost the sauce for us.

Re: Is anyone stocking the freezer with meals for when LO arrives?

We did this when DD was born and it was a lifesaver.

I made
Chili
Beef Stew
Chicken Apple Stew
Chicken Soup (Jewish style, with entire pieces of chicken in it)

You can also chop veggies and toss them in freezer bags with grilled chicken and marinade for stirfry.

eta: I make a killer butternut squash soup... good call. I'm adding that to my list Chat Icon

so far I have made chili, rice and beans and one other bean dish. I may try to make 1-2 soups in the next few weeks.

I made a tray of ziti and a big pot of meat sauce that I divided into several containers for easy meals that just require boiling some pasta. I might make a bug pot of chicken soup too that i can also divide into a bunch of containers. I don't think I'm going to make anything more though since we don't have a ton of room in the freezer. I'll let DH get us takeout when we run out of premade meals ;)

I made the beef goulash yesterday and had the leftovers for lunch. The recipe is from this site. I added an extra onion, a small can of sauce, and some seasoning salt and garlic powder bc it was a little bland the first time I made it. Much better this time.

Here's the burrito pie recipe. I've made it so many times and it freezes really well.
