Stick it in the bank.
If I have to spend it I would put it toward groceries. Maybe buy a nice Prime Rib or something and make a special supper. Then i would invite the person who gave us the gift!

We're in desperate need of better cordless phones (on one, the 2 and 7 do not work), so I would get a good set of cordless phones. I just bought myself Uggs last week, and they were the only thing I wanted for myself lately.

It'd just go in the bank account or I'd use it as the cash in my wallet until it ran out. In all honesty, I probably wouldn't do something special with it.
My DH got a $500 Visa gc from work as a thank you for a project he worked on... We spend it on blinds for the new house since that was our next purchase anyway. Maybe we're boring!
