It was 63 degrees here in CO today so we're grilling steaks and having mashed potatoes and sauteed veggies

ok its simple buy sweet (not hot) green peppers or red but red are more $$$ but taste sweeter cut off the tops clear out the inside (Seeds) save tops... chop up fine along with onion and garlic saute until tender...buy the 3 pack of equal portions of veal, beef and pork brown in skillet and in mixture of pepper tops, onion & garlic...saute abit more add 2 tablespoons of tomato paste saute add salt pepper, garlic/onion power and fresh flat leaf parsely... remove from heat add a good handful of grate parm. cheese or romano (you pick) now you need a good jar sauce like Rao's or if you make your own even better...place a few spoons of sauce on the bottom of a casserole dish...fill each pepper with the meat mixture and stand upright in dish. cover tops with sauce and add in remaining sauce to the dish... cover and bake until pepper are soft remove lid top with grated mozz. place back in oven uncovered under melted/ slightly browned...enjoy
I like making a plain white rice as a side, when I serve it I place the pepper in a bed of the rice split it open and spoon in abit of sauce...

I made some turkey soup with some leftover turkey breast from last week-
then I made bonesless, skinless chicken thighs with a chili/cinnamon/coriander spiced rub, onion perogis (DH was BEGGIN) and an arugula salad with fig & lemon dressing (homemade).
