Grilled chicken topped w/ prosciutto and mozzarella.... and it's just for ME. Rich has evening parent/teacher conferences tonight, for the working parents that can't make it during the day. His last conference is 9:30!!!! I can't believe they go that late.

That is my absolute favorite meal..with a little balsamic..ahhhhh
We are having terriaki steak with I don't know what yet.

That sounds sooo good! Silly ?? Do you buy the prosciutto right @ the deli counter and just throw it on top of the chicken w/mozzarella?

You can use the cheap one - doesn't need to be the import.
Go w/ low sodium cheese, if you can....sometimes w/ the proscuitto and the cheese, it's a little salty.
I didn't put any balsamic - I had an open bottle of wine, so I made a white wine sauce.

same here...I get the domestic prosciutto but use fresh mozzerella...the deli on the corner makes the best mozz I ever had.
can you tell me about the wine sauce?? I need to learn how to cook different things like that

Jeez...what wasn't for dinner tonight?!! I did marathon cooking for the week today! So I made... 1. Lentil Soup 2. Vegitable Lasagna 3. Steamed some cauliflower so I can mash it or bread it later this week. 4. Cooked a spagetti squash.
So I snacked a little on each & never sat down to eat! DH had sausage & peppers that hi mom made after all that!

lol - well WINE SAUCE to me is white wine (i like chardonnay, so I had it open in the house), corn starch, and some chicken stock (I actually used a chicken bullion cube tonight.) I'm a lousy cook. I need practice.

TY..It sounds soo good. We usually do get low sodium cheese. I feel like I am always making the same meals..TY again! Def. giving this one a try!
