Re: what is one thing that you bake/make for the holidays..

I made cookie dough brownies covered in chocolate ganache for my friend's b-day. He didn't want a real cake, but I still wanted to stick some candles in something and sing happy b-day. I don't think any dessert I've ever made comes close to that. Though DH is obsessed with red velvet truffles and funny enough, I'm sick to death of red velvet cake! Chat Icon

Well the cookie dough brownies, I just use my regular chocolate chip cookie dough recipe.

Ingredients
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

And my regular brownie recipe....

Ingredients
2 cups sugar
1 1/2 cups all-purpose flour
1/3 cup baking cocoa
1 1/2 teaspoons salt
1 teaspoon baking powder
1 cup vegetable oil
4 eggs
2 tablespoons light corn syrup
1 teaspoon vanilla extract
confectioners' sugar
Directions
1.In a mixing bowl, combine sugar, flour, cocoa, salt and baking powder. Combine oil, eggs, corn syrup and vanilla; add to dry ingredients. Fold in nuts if desired. Spread in a greased 13-in.x 9-in.x 2-in. baking pan. Bake at 350 degrees F for 25-27 minutes or until a toothpick inserted near the center comes out clean. Dust with confectioners' sugar while warm if desired.

When I pour the brownie batter into the pan, I ball up chunks of cookie dough and just toss 'em in!

And chocolate ganache is SUPER easy! I jsut follows this recipe and pour it right over.

Ingredients
9 ounces bittersweet chocolate, chopped
1 cup heavy cream
Directions
1.Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.
2.Allow the ganache to cool slightly before pouring over a cake. Start at the center of the cake and work outward. For a fluffy frosting or chocolate filling, allow it to cool until thick, then whip with a whisk until light and fluffy.

And then of course, Red Velvet Cake Truffles.

My sister and I make Sausage Rolls for Christmas. It was something that our Grandma and Poppy made every year and we are carrying on the tradition.

You take a circular round brie and top it with fresh whole cranberry sauce and you can add nuts too if you want and then you wrap it in puff pastry or phyllo dough (whichever you prefer- puff pastry is usually what most prefer) and bake it in the oven. And then when it comes out it is delicious!

Re: what is one thing that you bake/make for the holidays..

Thanksgiving I HAVE TO make apple pie for my FIL, but last year I also made the Pioneer Woman's pecan pie with a whiskey maple cream sauce and it was a HUGE hit

Pecan Pie Recipe

For Christmas Eve I always make Coconut Shrimp and Shrimp Oreganata (FM me for recipes)

Christmas I give out PB fudgy candies to my cousins and they go nuts and they're SUPER easy:

2 tbsp chunky PB
2 cups melting chocolate
1 bag marshmallows (can be mini or reg)

microwave until choc melts, stir in PB.
Spread in parchment-lined square dish and arrange marshmallows on top. Put in the fridge to set overnight. Cut to mallow size if using big ones or just cut in little squares for mini mallows. wrap em up in candy wrappers and enjoy Chat Icon
