Depends on the industry and the quote.
I work in publishing and it's a more creative than conservative environment. A few coworkers (at all levels) have signatures and it never phased me.
Actually, one of the executive assistants has the tagline, "It's nice to be important, but it's more important to be nice." It cracks me up because she works for a bitchy editor.

Not weird, but I also work for a nonprofit, so lots of people have motivational quotes under their signatures given the nature of our office.
I work with non profits and see quotes a lot. I dont necessarily think they are unprofessional. I think it depends on your line of work.
