Mon - Fish crusted with parm/bread crumb mixture. Side of beans and greens (kale, beet greens and canneloni beans)
Tues - BBQ chicken, baked beans, and salad
Wed - Balsamic Chicken, roasted kohlrabi, and carrots
Thurs - Roasted beets and goat cheese over salad - leftover balsamic chicken
Fri - Turkey burgers and asparagus and corn

Sun: BBQ: Steak, Baked Sweet Potato, Steamed Aparagus w/ breadcrumbs, and iceburg salad wedge with blue cheese and bacon
Mon: bbq pulled pork sandwiches and chips
Tues: chicken fingers, fries, and cole slaw
Wed: grilled veggies & laughing cow on rye bread
Thurs: Pasta tossed with icbitnb and lite parmesan and eggplant cutlets
Fri: ??
I will edit when I come up with the menu, but this thread will force me to do that

Greek Chicken Cutlets (Martha Stewart)
Serves 4
Ingredients 1 pint cherry or grape tomatoes, halved 1/3 cup pitted Kalamata olives 4 ounces feta cheese, coarsely crumbled (1 cup) 1/2 cup fresh mint leaves 2 to 3 tablespoons olive oil Coarse salt and ground pepper 1 1/2 pounds thin chicken cutlets (about 8)
Directions In a medium bowl, combine tomatoes, olives, feta, mint, and 1 tablespoon oil. Season with salt and pepper; set aside. Heat a grill pan over high; brush lightly with oil. Season cutlets with salt and pepper. Cook, working in batches as necessary, until chicken is cooked through, 1 to 2 minutes per side. Transfer to a plate, and cover with aluminum foil to keep warm. Top chicken with tomato mixture, and serve. SPANKOCORIZO 2 1/4 pounds of fresh spinach, chopped, washed, drained 1 spring onion, chopped 1/3 cups of olive oil 1 1/3 cup of water 1 1/3 cups of long-grain rice 5 1/4 cups of water sea salt freshly ground pepper juice of 1 lemon (about 2 tablespoons)
Preparation: In a stock pot, sauté the chopped spring onion in the oil over medium heat for 8-10 minutes. Add spinach and 1 1/3 cups of water and cook until the spinach wilts, about 5-7 minutes. Add rice and 5 1/4 cups of water, bring to a boil, and cook for 15 minutes, stirring occasionally. Stir in lemon juice and salt, cook for another 5 minutes and remove from heat. Stir, cover, and let sit for 20 minutes until the dish "melds."

Thurs : Smoked pork chops, sauerkraut, mashed potatoes, veggie salad.
Fri : Lamb, zucchini fritters with tsaziki sauce, sliced tomatoes.
Sat : Chef's night off.

Sunday- Take out Italian food
Monday- Stir fry colossial lemon and herb shrimp,asparagus, Basmati Vegetable rice .
Tuesday- Spinach and Fontana cheese chicken sausages on rolls w/ grilled veggies and mozzarella cheese.
Wednesday- Deli Roast beef heated w/ brown gravy, mashed potatoes, and salad.
Thursday- Homemade General Tso's chicken the healthy version of it- poaced chicken tenders in reduced sodium chicken broth and sauteed in peach salsa) , served w/ Quinoa, and steamed broccolli.
Friday- Baked ziti,salad, and meatballs- (going to my sisters house it is my Niece's 4th birthday and my immediate family will be there)
Saturday- Not sure yet!

Falafel
1 15 Oz Can Cooked Chick Peas (Garbanzo Beans), rinsed and drained 1 Garlic Clove 1/4 Cup Onion, chopped 1/4 Cup Cilantro, chopped 1/4 Cup Parsley 1/2 Cup Bread Crumbs 1 Tsp Cumin 1/2 Tsp Salt Olive, Vegetable or Canola Oil for pan searing
1. Place the first 8 ingredients in a food processor and puree. Make sure the mixture is throughly combined. Scrape down the sides of the mixture as needed. 2. With moist hands (so the mixture doesn’t stick to your hands) form patties using about 1 tablespoon of the mixture and place on a plate while you form the remaining patties. 3. In a medium saute pan, heat around 2 tablespoons of oil over medium heat. You want the pan to have a thin coating of oil. 4. Add half of the patties to the pan and saute for 4 minutes on each side or until golden (you may have to add a little more oil if your pan get too dry). 5. Remove the patties from the pan and place on a paper towel lined plate (to absorb any extra oil). 6. Cook the remaining patties. 7. Cool and serve with yogurt sauce.
Yogurt Tahini Sauce (Makes a little over 1/2 Cup)
1/2 Cup Yogurt 1 Tbsp Lemon 1 Tbsp Tahini (if your little one has a nut allergy, you could leave this out)
1. Place all the ingredients in a bowl and stir to combine
Chicken Sun Dried Tomato Mini Burgers (Makes 8 mini burgers, or 4-5 big burgers)
1/3 Cup Sun Dried Tomatoes, packed in oil 1 1/4 lb Ground Chicken 1/4 Cup Parmesan Cheese 1 Tsp Salt 2 Slices Mozzarella, Provolone, White Cheddar or any kind of cheese you like, cut in fourths 8 Mini Burger Buns or regular size buns cut four ways Olive Oil
1. Preheat grill, panini maker, or saute pan. 2. Place sun dried tomatoes in a food processor, process for 30 seconds until chopped. 3. Add ground chicken, parmesan cheese, and salt and process until all ingredients are incorporated. 4. Use a 1/4 cup of the chicken mixture and form into patties for mini burgers, or use a 1/2 cup and form into larger patties. 5. Grease grill, panini maker or pan with olive oil. 6. Toast burger buns for one minute and remove. 7. On the grill or pan, cook patties for 3 minutes on each side for mini burgers, 4 minutes for bigger burgers. In the panini maker, cook a total of 3 minutes for minis, 4 minutes for larger burgers. 8. Add cheese to the patty in the last minute of cooking to melt. (If you are cooking with the panini maker, remove patty once fully cooked and add cheese and let patty rest for one minute (the cheese will melt while the burger is resting). 9. Place patties in burger buns and serve.
** i havent made the falafel yet but i made the chicken sliders and i HIGHLY recmd them! i added a clove of garlic and some fresh basil to the food processor and i think it gave it a nice kick! totally making this for my next bbq dinner party! enjoy!

Sun: father's day. grilled porterhouse steaks with italian salsa verde, grilled zucchini and portobellas, homemade potato salad
Mon: pasta salad dressed with left over salsa verde, grilled chicken, and left over grilled veggies
Tues: dinner at my SIL's
Wed: cobb salad with grilled chicken, warmed bread
Thurs: dinner out for sibling HS graduation
Fri: burgers with the fixins and fries.
