Weekly menu thread - 1/30/11

I guess no one started this yet so I will go ahead.

Sunday - takeout

Monday - beef stew (never made last week)

Tuesday - leftovers

Wednesday - cider glazed chicken cutlets, salt potatoes, salad

Thursday - citrus marinated broiled tilapia (for me, salmon for DH), wild rice, roasted cauliflower

Fridday - paninis - roast beef/caramelized onion/cheese/horseradish mayo, with chips

Saturday - out

Sun: Eggplant Parm over Spaghetti, Tossed Salad, and Crusty Bread

Mon: Chicken and Veggie Stir-fry over Brown Rice

Tues: Baked Pork Chops with Apples, Baked Sweet Potato, and Roasted Butternut Squash tossed with Sage and Orange Zest YUM!

Wed: Leftovers

Thurs: Broiled Ribeye Steak, PW Crash Potatoes, & Creamed Spinach

Fri: Pizza

Sat: One pot Roasted Chicken with Carrots & Potatoes

Sun: roasted chicken, not sure about sides yet..

Mon: chicken tortilla soup using the left over chicken

Tues: leftovers from Sat

Wed: tacos with ground turkey, and all the fixins!

Thurs: leftovers from Sun and Mon

Fri: out

Sat: I'll prob make a taco dip from the left over tacos and I'm sure we'lll still have left over soup.

Tues.- Smothered pork chops over egg noodles and roasted asparagus

Wed.-Dr. appt. take out

Thurs.- Work party (leftovers for DH)

Fri.- homemade pizza

Last week was all out of whack with my DD getting sick so here's the plan for this week.


Sun : PW's Mexican Lasagna with chips and guac

Mon: Corn and crab chowder

Tues: PW's chicken spaghetti

Wed: Chicken marsala w/mashed potatoe and asparagus

Thurs and Fri: probably leftovers unless they get used for lunches.

Sure. It's so easy -

Salt and pepper one pound of chicken cutlets, melt a tablespoon of butter in a skillet over medium-high heat. Cook chicken about 3 minutes on each side, remove from pan. Add about a half cup of apple cider (refrigerated kind) and a teaspoon of dijon mustard to the pan, scraping to remove the brown stuff, cook 2-3 minutes until syrupy. Put the chicken back in the pan, turn to coat. Sprinkle with fresh chopped parsley.

I am so excited for salt potatoes!

Tuesday-Chicken Cutlets with edamme and smashed potatoes

Wednesday-Eggplant Parmigana

Thursday-Slow Cooked pot roast

Friday-Homemade Pizzas. (Pesto chicken and mozzarella on flat bread.)

Saturday-A spiraled ham with mashed pot and roasted veggies.

I'd like to hear Marie's recipe too but I make probably a similar dish as it has the same name and I can share it with you!

Ingredients:
Ground Turkey
Corn (I prefer fresh in summer months but when it's not available I use canned)
1 can Black Beans
1 large Onion
1 large Green Pepper
1.5-2 cups Salsa
3 cloves garlic
1 teaspoon cumin
1/2 tsp chili powder
ground black pepper
1 tablespoon cilantro
optional: Kaiser Rolls

Heat a little EVOO in a skillet and add the onion and garlic. Saute a minute or two and then add the ground turkey. As that is cooking add the cumin, chili powder, black pepper and cilantro. Once the meat is browned, add in the black beans, corn and green pepper. Mix it around. Then add in the salsa and cook 4 minutes until it is all mixed together and hot. You can eat this with or without the rolls.

I think I got this from a cooking light magazine, but I don't really remember. It's good though. especially with fresh, crisp corn.

sunday - marinated skirt steaks, baked potatoes, spinach and cheese stuff portobella mushrooms

monday - leftovers from sunday

tues - porkloin and apples on the slow cooker with mashed potatoes

wed - fish tacos with chipotle slaw and black beans

thurs - Pasta with chicken sausage and broccoli rabe & garlic bread

friday - leftovers

sat - think we are going to my sisters for saurbraten!

tuesday: Chopped chicken and veggies in marinara sauce over brown rice

Wed: Talapia with broccoli..not sure how im make the fish yet?

thursday: Left overs.. (doing taxes)

Friday: skirt steak with crash hot potatoes and roasted brussel sprouts.

I made less than 1/2 of the PW Mexican lasagna and it still made so much so we're doing leftovers so that will push everything back a day. I think next time I'll make 1/4 the recipe. It was good though.

Colleen - it's a WW recipe I don't use the jalape o peppers and I add extra chili powder, I just bought the WW cookbook at Borders super cheap!

1 Tbsp canola oil
1 medium onion, chopped
1 clove garlic clove(s), minced
1 small jalape o pepper(s), seeded, chopped
1 tsp chili powder
1/2 tsp dried oregano
3/4 pound(s) uncooked ground turkey breast
7 oz canned corn with red and green peppers, with Mexican seasonings (also called mexicorn), rinsed and drained*
1 1/2 cups salsa
1 Tbsp dark brown sugar, packed
whole wheat hamburger rolls or buns

Instructions
Heat a large nonstick skillet over medium-high heat. Swirl in the oil, then add the onion, garlic, and jalapeño. Cook, stirring occasionally, until softened, about 4 minutes. Add the chili powder and oregano, and cook 1 minute more. Add the turkey and corn, and cook until the mixture is nearly dry, about 4 minutes. Stir in the salsa and sugar and cook, stirring occasionally, until slightly thickened and the turkey is cooked through, 4–5 minutes longer. Spoon over the opened rolls and serve.

Notes
*Mexican-style corn, sometimes labeled Mexicorn, is a mixture of corn kernels and bell peppers often flavored with mild Mexican spices, usually found next to regular canned corn in the grocery store. If you can’t find it, plain canned corn will do.

It's SOOO much! Friggin' thing was literally an inch or so over the top of my lasagna pan!!
