side dishes
I have the most difficult time with side dishes. I usually end up making the same thing: mac and cheese or rice.
DH is picky- he doesnt like most veggies, doesnt any type of potato (sweet, mashed, broiled, baked, etc).
At the same time we're also trying to eat healthy!
Can you reccomend easy to make side dishes?

Well, if potatoes are out, veggies are all you got!
What about quinoa? Or an orzo pilaf or salad?
Roasted basalmic veggies are good too.
Roasted potatoes are soooooo easy I can't imagine anyone not liking them.
Broccoli and cauliflower gratin? Hayley's burnt broccoli is sooo good too!

Thanks for the suggestions! I hate to be one of those picky posters and shoot down every idea cuz I know thats annoying but DH is such a PICKY eater!! Arggh...
Rissoto sounds like it might be a good option- does anyone have a recipe? I've never made it before.
I personally LOVE rice and beans but DH doesnt eat beans (picky eater again).
Also, he wont eat stuffing (another one of my favs) because he doesnt like the consistancy..he doesnt like mushed up food.
It's so hard. I'm just gonna start making two sides- one for me and one for him!

Here are some things a made recently
-Salad (with candies walnuts,craisens, goatcheese and good seasons) -peas with mushrroms and onions -brown rice mash potatoes -a baked sweet potato -sweet potato fries -corn -zucinni on the barbeque

Dh is kinda picky too- doesn't like rice or veggies either. I made him couscous with mixed veggies..he ate two big helpings!!

when i make DH my "risotto" (its not really risotto but he still loves it), i just add a teeny bit of butter to a large saucepan,then i add some rice and then mix and "toast" it. then i add some chicken broth (enough to cover the rice) and add some diced tomatoes (you can basically add whatever you want) and mushrooms, then cook on low till the rice gets soft and is done. i sprinkle a little bit of parmesean cheese on top before serving.

pierogies risotto egg noodles rice - you can really play with rice and all sorts of stuff pasta with broccoli (or any other veggie you might be able to get him to eat!) cous cous pasta with pesto sauce fettucine alfredo rice pilaf
ETA I made this risotto sunday and it was A HUGE HIT!!!! you can pretty much substiteu the mushrooms for anything (maybe seafood?) since he is so picky!

I work late 2 nights a week, so I have some quick sides that i use.
I buy uncle bens rice boxes (the flavored ones) Pasta roni - there are a bunch of different flavors couscous bag of spinach - sautee it with garlic and a little salt and pepper I do the same with arugula I also buy frozen veggies a lot - they are quick to heat up. boxed mashed potatos. Not as good as homemade, but are easy and quick to make.

whole wheat pasta comes to mind. you can do a lot with small noodles like shells or bowties or fusilli with different veggies & flavors.

fast, easy and healthy-i slice a few zuchinni through the mandoline and toss with olive oil, salt. pepper, minced garlic and roast in oven at about 375 for about 20min (more or less depending how thin you sliced them) Turn with a spatula so both sides get even roasting
