Shrimp recipe??

I peel them and devein them. Then I toss them in a little olive oil, a lot of minced garlic, kosher salt and a pinch of pepper. Lay them on a pan and roast in the oven at 400 for 7 minutes (or until cooked through). Meanwhile .. I cook some pasta - drain it and stir in some spinach and a scant 1/4 cup of warm chicken broth and a pat of butter. Pour the cooked shrimp and it's juices over the pasta, stir and serve with a salad and some nice garlic bread.

OR marinate them in lemon, garlic and olive oil, skewer them and grill them until cooked. Lay them over a bed of lemon rice pilaf with a side of steamed broccoli and a tomato onion and mint salad.

for the easiest shrimp recipe ever...

Preheat the oven to 450.

Then in a small saucepan, add one stick of butter, a squirt of dijon mustard, a squirt of lemon juice (I use 1/2 lemon), 1-2 cloves chopped garlic, and some chopped fresh parsley. Remove from heat when the butter melts.

Put shrimp in a baking dish and pour the butter mixture over it. Bake for about 12 minutes or until the shrimp are opaque.

I made this last night...sorry no exact measurments: Mine fed 2 people

I used a peeler to peel the garlic - worked out well - didn't have to cut it so evenly.

Anyway:
Garlic (2-5 cloves - I wasn't kissing anyone)
White wine ( couple glugs)
chicken stock (3/4 can)
boil to reduce to 1/2
Add in petite diced tomatoes (3/4 can)

cook pasta a dente (will finish w/shrimp)

add shrimp (I also used scallops) to wine/broth/tomatoes until almost cooked.

Wilt in spinach, add pasta to finish
cooking.

ENJOY!!!!

My mom makes a GREAT shrimp and rice salad

she boils the shrimp and cuts them up into small bite sized pieces. at the same time makes white rice.

She mixes the 2 hot things together then let cool in the refrigerator.

she cuts up green olives stuffed with pimentos and green & red peppers.

When the rice mixture is cold she mixes in the veggies and mayo until mixed together.
serve cold

I made this and it was so yummy. The only thing is, the shrimp do NOT take 12-15 minutes to cook on 450. They cook much faster, just keep an eye on it.

spicy shrimp with corn & quesadillas (adapted from real simple)

* 3 ears fresh corn
* 5 scallions, thinly sliced
* 1 tsp. fresh thyme
* kosher salt and pepper
* 1 tbsp. chili powder
* 1/4 tsp. cayenne pepper
* 2 tbsp. olive oil
* 1 lb. large shrimp, peeled and deveined
* 1/2 cup Monterey Jack cheese, shredded
* 2 large flour tortillas

Directions

1. Bring large pot of salted water to boil. Boil corn for 8-10 minutes.
2. Cut corn kernels from cobs. Combine them in bowl with scallions, thyme, 1/4 tsp. salt, and 1/8 tsp. pepper; set aside.
3. In medium bowl, combine chili powder, cayenne, oil, and 1/2 tsp. salt. Add shrimp and toss to coat.
4. Heat grill pan to medium and cook shrimp, turning once, until cooked through, about 4 minutes.
5. Meanwhile, sprinkle cheese over half of each tortilla. Fold in half and grill, turning once, until cheese melts and tortillas are crisp, about 2 minutes. Transfer quesadillas to cutting board and cut into wedges.
6. Divide shrimp and corn among plates and serve with quesadillas.

simple shrimp fra diavolo

* 1 pound large shrimp, peeled, deveined
* 1 teaspoon salt, plus additional as needed
* 1 teaspoon dried crushed red pepper flakes
* 3 tablespoons olive oil, plus 1 to 2 tablespoons
* 1 medium onion, sliced
* 1 (14 1/2-ounce) can diced tomatoes
* 1 cup dry white wine
* 3 garlic cloves, chopped
* 1/4 teaspoon dried oregano leaves
* 3 tablespoon chopped fresh Italian parsley leaves
* 3 tablespoon chopped fresh basil leaves

Directions

1. Toss the shrimp in a medium bowl with 1 teaspoon of salt and red pepper flakes. Heat the 3 tablespoons oil in a heavy large skillet over medium-high heat. Add the shrimp and saute for about a minute, toss, and continue cooking until just cooked through, about 1 to 2 minutes. Transfer the shrimp to a large plate; set aside. Add the onion to the same skillet, adding 1 to 2 teaspoons of olive oil to the pan, if necessary, and saute until translucent, about 5 minutes. Add the tomatoes with their juices, wine, garlic, and oregano. Simmer until the sauce thickens slightly, about 10 minutes. Return the shrimp and any accumulated juices to the tomato mixture; toss to coat, and cook for about a minute so the flavors meld together. Stir in the parsley and basil. Season with more salt, to taste, and serve.

shrimp and vodka sauce.. boil deveined peeled shrimp,heat up vicortia's vodka sauce, put over pasta.very simple!

Shrimp Creole

* 1 pound fresh or frozen medium shrimp in shells
* 1 medium onion, chopped (1/2 cup)
* 1/2 cup chopped celery
* 1/2 cup chopped green sweet pepper
* 2 cloves garlic, minced
* 2 tablespoons butter or margarine
* 1 14.5-ounce can diced tomatoes, undrained
* 1/2 teaspoon paprika
* 1/4 teaspoon salt
* 1/8 to 1/4 teaspoon cayenne pepper
* 2 tablespoons snipped fresh parsley
* 2 cups hot cooked rice

Directions

1. Thaw shrimp, if frozen. Peel and devein shrimp, removing tails. Rinse shrimp; pat dry with paper towels. Set aside.

2. In a large skillet cook onion, celery, sweet pepper, and garlic in butter over medium heat about 5 minutes or until tender. Stir in undrained tomatoes, paprika, salt, and cayenne pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 5 to 8 minutes or until thickened.

3. Stir shrimp and parsley into tomato mixture. Cook, stirring frequently, for 2 to 4 minutes or until shrimp turn opaque. Seaston to taste. Serve over rice.

4. Makes 4 servings
