Low-carb/no-carb meal ideas?

I am starting this tomorrow. I have done it in the past and it was great. I need to limit my carb intake...that's my problem Chat Icon

I'm good on breakfast stuff. But I need dinner/lunch ideas.

ETA: I should add I like the modified version Chat Icon Like for dinner I"ll have a small portion of brown rice. I dont want to cut out carbs entirely, I know thats not realistic long term.

Whether you are on Atkins, South Beach or just follow a low-carb diet, can you share what your daily menu usually looks like? I am good on breakfast. I just need some lunch and dinner ideas.

For lunch, I like salads with grilled chicken, or rolled up cold cuts.
My favorite no carb/low carb dinner is white bean and chicken chili. It's very filling and can be eaten with or without a little brown rice.

i'm doing the joy bauer slimdown and it's no carbs/starches for dinner.

tonight we had honey-mustard chicken, sliced cucumber with lemon, and grilled asparagus with balsamic

last night we ordered in, and i got chicken souvlaki with double order of grilled veggies

This sounds like what I usually do too.
Salads with dressing on the side
Turkey Chili
Fish on the grill with just a veggie (no starch) - Trader Joe's has awesome premarinated tuna and mahi mahi and it's super cheap too!
For snacks, I live on string cheese.

One thing I will say is that I could do it completely. I needed some fiber in there so I do have a bowl of Fiber One with light soy milk for breakfast but since it's so early in the day it hasnt seemed to matter in losing weight.

your best bet is to eat simply- meats, veggies and fats

this is my usual...

tuna with lots of mayo over salad
cold cut roll ups with mustard and mayo
grilled chicken or steak over salad with blue cheese
steak and asparagus or broccoli
no bean chili with cheddar and sour cream
rolled flank steak stuffed with veggies
eggs with bacon or sausage
crustless quiche

Dinner salads are always an easy low-carb entree: grilled chicken, grilled steak, grilled salmon, cold cuts, etc... sliced over salad greens and veggies, maybe some low-fat cheese. I never get tired of these because there's so many combinations to use.

Just simple meals of grilled/roasted chicken, fish, pork, steak etc, with lower-glycemic veggie sides... just skip the starchy sides like rice, potatoes, noodles, etc.

When I did Atkins one of my favorite was to take either a red bell pepper cut out the insides and stuff it with either shrimp, chicken, or tuna salad for lunch.

You can also do it with a tomato. Gut the core of the tomato and then cut it two ways but not all the way through - just enough so it splits making a flower. And then stuff it with one of the above.

I am on a low carb diet (for insulin resistence) ... here is what my day consists of (rotating of course)

Breakfast:
* High Fiber Oatmeal w/ almonds & berries
* Egg White omelets w/ deli flat
* high fiber english muffin w/ PB or cream cheese or riccotta
* high fiber cereal w/ 1/4 banana

Lunch:
* Salad w/ beans and meat
* sandwich on deli flat
* Greek Yogurt w/ 1 tbs honey & almonds
* tuna, chicken or egg salad w/ light mayo on deli flat

Dinners:
This is my Formula: Meat, 2 different Veggies, Salad, tiny bit of starch
(I apply this is anything I make/eat every night) ...

Snacks:
Fruit and Almonds
Fruit and PB
Kashi Go Lean Bar
High Fiber Cereal w/ banana or berries
yogurt w/ almonds
string cheese or any other cheese & veggies
veggies w hummus
cheese and crackers


Salads:
Cucumber Salad
Tomato & Celery Salad
Green Salad
Bean Salad



The key to low carb/good carb is to make sure you always eat a protien w/ your carbs. So if you are doing to have fruit, eat nuts with it. If you are having a piece of bread, but PB on it, etc ....


Look for high fiber & high protien items. They will off set the glycemic load (different than the glycemic index)WIKI info on Glycemic LOAD of a carb.

Another way to decrease your glycemic index for any given meal is to add vinegar to your meal (i.e. add it to your salad). One study I read, says it can lower the index of the entire meal by 20-40%. Also, adding in more fresh vegetables. It takes a lot of vegetables to reach one carb exchange (as opposed to eat a straight forward carb) and will help you get full

For breakfast my goal is under 30g carbs (good carbs, not bad carbs like white bread and jelly carbs) ... so

for example, I eat Quaker Oats High Fiber Cinnamon Swirl Oatmeal. I add almonds to it... The oatmeal has 34g of carbs but 10g of fiber and 4 g of protien. A serving of almonds (1oz equals 23 almonds, which is at least double than what I would have in a bowl of oatmeal) has another 6g carbs (3.5g of fiber) and 6g protien.

total carbs: 34g + 6g = 40g
total fiber" 10g+3.5g = 13.5g
Total net carbs: 26.5g for breakfast
In addition, the protien from the oatmeal and the almonds help delay the absorbtion of sugar. So while I ate close to 30 carbs, there was A LOT of fiber and protien to counteract it and I avoid the 'crash' from sugar. Fiber also makes you feel fuller and more satisfied.


I find for me as long as I load up on the fiber and/or protien, my numbers stay within range. Also, for lunch & dinner I eat all my protien, then veggies, THEN starch (i.e. brown rice) that way I am only eating a 'little' carbs instead of chowing down on that while I am starving.

Thomas' makes a Fiber Goodness English MUffin:
28g carbs, 9g fiber, 5g protien
You can look online at their other products to get an idea of what each product has. Fiber One usually has good products.

High Fiber Cereal s*cks Chat Icon
I am currently eating Uncle Sam's Original -- not really that good at all, but it does go down when I am in a pinch. I also don't use a lot of milk in my cereal (never have) so it's maybe 1/4 cup.

When in doubt I add almonds to any meal. Just pop in 6 almonds and I know I got the protiens in to help offset my numbers.

i noticed since not eating any breads, pastas, rice, etc (low carb diet) i haven't had any major gas problems. I used to get bad gas pains and used to belch so much now i never do it anymore. I am beginning to think my body actually doesn't do well with digesting grains.

I also found my headaches ( a few a week) went away. Just yesterday I had company over and I ate a piece of cake. A few hours later I had a dull headache. Thinking back, I got a dull headache a lot and now that I low carb it, my headaches are gone and only come back if I cheat and eat sweets instead of my diet.

I found out I have a sensitivity to gluten while following a low carb diet!

My stomach is a million times better now!

Crock Pot Chicken Taco Chili - 4 pts
Crock Pot Chicken Taco Chili
Servings: 10 • Size: 10 oz • Prep Time: 5 minutes • Calories: 202 • Points: 4 ww points
* 1 onion, chopped
* 1 16-oz can black beans
* 1 16-oz can kidney beans
* 1 8-oz can tomato sauce
* 10 oz package frozen corn kernels
* 2 14.5-oz cans diced tomatoes w/chilies
* 1 packet taco seasoning
* 1 tbsp cumin
* 1 tbsp chili powder
* 24 0z. (3) boneless skinless chicken breasts
* chili peppers, chopped (optional)
* chopped fresh cilantro

Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

Servings: 8 servings • Size: 1 cup • Prep Time: 5 minutes • Points: 3 ww points
Calories: 171.9 • Fat: 1.6g • Fiber: 3.8g

* 24 oz (1 1/2) lbs chicken breast
* 14.4 oz can diced tomatoes with mild green chilies
* 15 oz can black beans
* 8 oz frozen corn (I don't add this)
* 1/4 cup chopped fresh cilantro
* 14.4 oz can fat free chicken broth
* 3 scallions, chopped
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp cumin
* 1 tsp cayenne pepper (to taste)
* salt to taste

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top.
Cook on low for 10 hours or on high for 6 hours.
Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning.

Gina's Weight Watcher Recipes
Servings: 12 • Serving Size: 10.8 oz • Prep Time: 20 minutes • Points: 3.125 ww points

* 1.3 lb (20 oz) fat free ground turkey breast
* 1 small onion, chopped
* 1 (28 oz) can diced tomatoes
* 1 (16 oz) can tomato sauce
* 1 (4.5 oz) can chopped chilies, drained
* 1 (15 oz) can chickpeas, undrained
* 1 (15.5 oz) can black beans, undrained
* 1 (15.5 oz) can small red beans, undrained
* 2 tbsp chili powder

Topping:

* 1/2 cup chopped red onion
* 1/2 cup chopped fresh cilantro for topping
* shredded cheddar to top (extra pts)

Brown turkey and onion in a medium skillet over medium high heat until cooked through.
Drain any fat remaining and transfer to crock pot. Add the beans, chilies, chickpeas tomatoes, tomato sauce and chili powder mixing well.
Cook on high 6-8 hours.
Garnish with onions, cilantro and cheese and enjoy!

Servings: 4 • Serving Size: 2 taco wraps • Time: 30 minutes • Points: 3 ww pts

* 1.3 lbs 99% lean ground turkey
* 1 tsp garlic powder
* 1 tsp cumin
* 1 tsp salt
* 1 tsp chili powder
* 1 tsp paprika
* 1/2 tsp oregano
* 1/2 small onion, minced
* 2 tbsp bell pepper, minced
* 3/4 cup water
* 1/2 8 oz can tomato sauce
* 8 large lettuce leaves from Iceberg lettuce

Brown turkey in a large skillet. When no longer pink add dry seasoning and mix well. Add onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.

Wash and dry the lettuce. Place meat in the center of leaf and top with tomatoes, cheese and salsa or whatever you prefer. (Toppings extra points)

In the beginning I felt like I was starving. I had to add a small amount of carbs in because I was getting shaky almost like my sugar was too low. Not sure what I am doing wrong? Chat Icon Chat Icon
