I dip them in fat free italian dressing, then in bread crumbs, then roll them up around a piece of cheddar cheese (I use 2%). It's the most delish thing ever!

My friend adds a splash of hot sauce to the eggs before breading. It is really good. It gives it that little something extra where you're like "hmmmm, what is that"?
I dice up cooked chicken cutlets and make chicken parm rolls out of them. Buy premade pizza dough, roll it out really thin and section it into about 6-8 rectangles. Add sliced chicken cutlets, mozzeralla cheese and drizzle with tomato sauce. Wrap dough around chicken. Put on baking sheet and bake at 375 for 15 mins. Serve w side of tomato sauce. Delish!

panko bread crumbs are delish
also, sometimes i fry chicken breasts with flour instead of bread crumbs, and i put apple sauce on it...

sometimes i coat the chicken with balsamic vinegar or EVOO instead of the egg mixture, and then dib into breadcrumbs.
McCormick makes a "crusting blend" that is good for this too.
I also love to dip the chicken into italian dressing and then potato flakes!
