Jazzing up plain ol' cutlets
I make baked chicken cutlets at least once a week. We'll eat it with ranch dressing or in a salad or something but I'm getting so tired of that. I wanna find something to add to the breadcrumbs to spruce it up and make it more flavorful. Any suggestions?

Use Italian bread crumbs with a little parmesean. I also like to make my chicken parm with baked cutlets.

You can add:
Herbs de provence Basil Parsely Tarragon Lemon Pepper Poultry seasoning Rosemary Parmesan Crushed red pepper
Remember that you need to use more if its dried herbs; fresh herbs are more potent.

Try wheat germ with a little salt and pepper and put it between pane bread for panini with cheese and either pesto or a red pepper spread
Try panko crumbs with fresh herbs like parsley and sprinkle with lemon juice...

Maybe some different season packs - fajita, taco mix w/ the breadcrumbs
I make chicken cordon bleu(sp) - take thin cutlets, place 1 slice ham, 1 slice swiss, roll/fold, i use dijon mustard as the glue - put a little on one side, then fold over - then a little more mustard - then roll in breadcrumbs -- bake.
ETA: My mom also just bakes w/ salad dressing - italian/cesear or BBQ sauce. Now she has a vidalia onion one that is really good.
Come to think of it - even some of the different salad dressing season packets would work well to i guess

I like to grind down pretzels and use them instead of breadcrumbs. Try Snyders Pumpernickel Onion or HoneyMustard mmmmm

When I make plain breaded cutlets I usually season my dredging mixture with some salt, red pepper, onion powder, granulated garlic. I also don't use plain beaten eggs for dipping.. I use eggs, dijon, and finely minced garlic with a splash of red hot and a drop of milk and beat it all up. It's a subtle difference.. but it's there!

when I bake the chix cutlets instead of using an egg batter.. i use oil and chopped garlic, then put it in breadcrumbs with parmesan cheese. Sometimes I heat up some hotsauce with a little bit of butter and poor it over the chicken to make buffalo chicken.

Great idea - especially after a party when you have 15 bags of open chips!!!
I have a recipe that does this with bbq chips. You crush the bbq chips, coat the chicken in them and bake. Serve with bbq sauce. It is yummy!

Instead of egg I use Ken's Northern Italian Lite salad dressing. Then dip in breadcrumbs and bake in the oven.

Yes! Panko crumbs are amazing!
Also, my dad gets a littl bored sometimes and actually tried crushing the crumbs from Tostitos and used that as breading once. Oh yea and he also used one of those flavored Wheat Thin crumbs too and it was really good! One way to use those broken pieces that are left in the bag!

maybe a bechamel sauce over them? I also use Panko and in the egg I use hot sauce. I sometimes double dip and use flour first.

I dip them in fat free italian dressing, then in bread crumbs, then roll them up around a piece of cheddar cheese (I use 2%). It's the most delish thing ever!

You can dip them in italian dressing and then in some bread crumbs with shredded parmesan cheese. Then throw them in the oven.
Or you can make fajitas. They're really quick. Just cut the chicken into strips, season it, cut up some onions and peppers. Cook everything and serve with tortillas.
We had this 2 nights in a row (at DH's request, LOL. He loved them).
