If you use fresh herbs please come in...
I had this discussion with some girls today. What do you do when you only need a little bit of a fresh herb? Buy and hope you use as much as you can before it goes bad? Grow your own, even in the winter? Freeze it?
I love using them, there is just no substitute. But I hate throwing them out.

They only have a few branches of what you need.

You mean the ones that come in the plastic clam shell thing? My stupid store has 9,000 sage ones. And that's it.

dill or rosemary i'll chop and freeze. dill is great to have on-hand in the winter like that because a pinch will do incredible things for a chicken soup.
if it's something more delicate like basil, i'll marinate with some olive oil to infuse it and store it away or make a pot of sauce to stick in the freezer. or with something like sage and thyme, i'll mix with garlic, oil and lots of salt & pepper to make a rub for meat (& store in the fridge/freezer if necessary).
in general, my specialty is making stuff from what's available, so i do that with herbs as well as leftovers or produce that's on the way out. base recipes for things like pizza or quiche or a white wine sauce for pasta or great tools for getting creative with leftover clean-out.
ETA: salad dressings are also a great way to use leftover herbs

Wash and thoroughly dry, chop, put in a ziplock and throw in the freezer...yummy!!! Fresh herbs all the time

I use mostly dried herbs.
Some, like dill and thyme, I freeze.
And I have this:
FridgeSmart container from Tupperware
I keep herbs I use a lot (parsley, cilantro), but not every day, in these. They stay fresh for weeks and weeks. Rubbermaid makes a cheaper version but IMO they don't work quite as well.

I have a little herb garden outside my back door, it has some hardy herbs growing in it they grow year round, Rosemary, sage, oregano and thyme. Its grown in an old belfast sink and somehow, it stays alive!!
