I always wanted to be a librarian. how nerdy is that? 
Being a published author. I have a manuscript for a children's book written, but I have no idea how to go about getting it published.
After my wedding I was offered a job as an event planner for 2 different companies that I dealt with (I did a lot of event planning for work). I would have loved it, but most of the events were on the weekends and DH works crazy hours during the week so we'd have never seen each other.

I'd be the owner of several companies -- a real estate holdings co, a real estate investment co, a real estate agency, and several financial institutions.
Actually... talk to me in 10 years.  I'm working toward all of that.
