I have a ton of zucchini
I just pick 5 HUGE zucchinis
What can I do with them
I mean HUGE I have one the no joke is the length of my calf!
Any recipes????
I make fried zucchini already and I have bbq'ed it
i havent done bread yet...it is good? any recipes for bread or anything else?

Oven Baked Zucchini Sticks
1/2 cup whole wheat flour 1/2 cup all purpose flour 2 tbsp corn meal 1 tsp salt 1/2 tsp pepper 1 1/2 lb zucchini 2 egg whites
Preheat oven 475 coat large cooking sheet with cooking spray combine all dry ingredients dip zucchini in egg white and dip in dry mix. Place on cooking sheet and coat with cooking spray. Cook 7 min, flip, coat with cooking spray. Bake until golden brown.
Cous cous with fresh vegetables. Follow the box directions and add chopped veggies in the last step and let veggies steam.
Grilled veggies on the bbq---marinate with olive oil and salt and pepper or with garlic or with any store bought marinade
Italian Zucchini
2 tbsp olive oil 1 onion chopped 1 garlic clove - finely chopped 5 zucchinis sliced 2/3 cup vegetable stock salt and pepper 1 tbsp chopped parsley for garnish
In skillet heat oil, onion, garlic for 5 min Add zucchini, stir 3-4 min Add stick and season with salt and pepper Simmer 10 min (most liquid has evaporated) Sprinkle with parsley
Stuffed Zucchini
cut zucchini in half long ways. scoop out center and place in mixing bowl. Add any of the following to mixing bowl---chopped mushrooms, kidney beans, garlic, italian seasoning ect......
stuff inside zucchini's. place in baking dish---spray with pam sprinkle tops of zucchini with italian seasoned bread crumbs and a little butter. cook at 350 for 20 min or until browned on top and zucchini is tender. You can also sprinkle the top with parmesian cheese

use a basic quiche recipe, and add shredded raw zucch, oregano, and grated parmesan

i do too from my garden! I already made fried zucchini & zucchini bread.... I also added it to pasta-my DH LOVES this dish! cut up a med size onion and 3 med size zucchini into thin disks.
In a large frying pan fry the onion on med-high in EVOO till soft(not brown) add the zucchini & some more evoo,fresh cracked pepper, salt, saute till onion is translucent... add a cup of chicken stock & cover pan-lower heat to LOW
meanwhile, boil a lb of pasta (i made this w/bowties) drain when al dente-add to the pan w/the zucchini/onion mix, add grated pecorino romano cheese (3/4 cup) and mix for a minute. put the pasta in serving bowl and serve w/ricotta on the side!

I lovvvveeee zucchini on the grill.... Slice into coin pieces(skin on)place in a bowl, mix in olive oil, salt and pepper and grill... simple and delish....

3 cups zucchini, diced 1 onion, chopped 4 eggs, beaten 1 cup Bisquick 1/2 cup vegetable oil 1/2 cup grated Parmesan cheese 1/2 teaspoon dried oregano ground black pepper to taste
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Grease a 12 inch pie plate. In a medium mixing bowl, combine zucchini, onion, eggs, Bisquick, vegetable oil, Parmesan cheese, oregano and pepper; mix well. Spread into the prepared baking dish. Bake for 30 minutes, or until lightly brown.

i know you said you have fried them already but im sure they were breaded or floured when you did it. my mom did something a little different.
my mom would simply slice the zuchini and fry them as is in a pan with olive oil. then when she was done she would mix it with chopped garlic and fresh mint and a little red wine vinegar. they would come out sooooo good!!

this is from the NYTimes a while back (I think '05)- i make it a lot in the summer:
Ingredients
salt and pepper 1/4 cup extra virgin olive oil 3-4 small zucchini or 3 medium zucchini, about 1 pound, rinsed and cut into 1/4- to 1/2-inch dice 1 teaspoon minced garlic (or more) 1 lb penne or other cut pasta 1 cup good ricotta cheese 1 cup basil leaves, washed, dried and torn 1/2 cup freshly grated parmesan cheese (optional)
Directions 1Bring a large pot of water to a boil and salt it. Put olive oil in a large skillet over medium-high heat; when hot add zucchini, along with a large pinch of salt and a sprinkling of pepper.
2Cook, stirring occasionally, until zucchini begins to brown, then lower heat and cook until it is quite tender, about 15 minutes total. About 5 minutes before it is done, stir in garlic and begin to cook pasta.
3While pasta cooks, warm a serving bowl and put ricotta in it, along with about half the basil. When pasta is tender but not mushy, remove and drain it, reserving about a cup of its cooking liquid.
4Use as much of this liquid as necessary, a bit at a time, to thin ricotta until it reaches a saucy consistency. Toss with pasta, zucchini, remaining basil and Parmesan, if you are using it, then taste and adjust seasoning. Serve.

I just made zucchini bread! It is AWESOME and moist!
**I substituted 1cup of Apple sauce for the 1 cup of oil! You cannot even taste the difference adn it's healthier!!
3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 3 teaspoons ground cinnamon 1/4 teaspoon baking powder 3 eggs 2 cups white sugar 3 teaspoons vanilla extract 1 cup vegetable oil 3 cups grated zucchini 1 cup chopped walnuts (optional)
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Sift together flour, salt, soda, cinnamon, baking powder. Beat eggs. Add and mix well sugar, vanilla, and oil. Add zucchini to egg mixture. Add dry ingredients, mixing well. Stir in nuts if desired. Pour into 2 ungreased loaf pans. Bake at 350 degrees F (175 degrees C) for 1 hour.

It is and Paula Deen has a good recipe on Food Network.
I like zucchini quartered and sliced into 1 inch pieces. Sauteed with onions, butter salt and pepper. Cook onions with butter until soft then add zucchini, salt and pepper. Cook until zucchini are soft. Add as much butter as need to make a nice sauce. Not the healthiest but good!

I was going to say dont do ANYTHING with those zuccinis until I gave you my zuccini pie recipe...but it looks like the secret is out. I LOVE this recipe...I actually have to make TWO in order for there to be anything left because it is gone in about two seconds. Plus, you cannot BELIEVE how yummy the house smells while it is baking. Must make recipe!!!

I made this last night (its a family staple too!).
But this time, I added ricotta to make a creamy version (saw a recipe online) and added sliced tomatos and cheddar on top.

My FAV Zucchini bread... I made a TON of it today
3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 3 teaspoons ground cinnamon 3 eggs 1 cup vegetable oil 2 1/4 cups white sugar 3 teaspoons vanilla extract 2 cups grated zucchini 1 cup chopped walnuts
DIRECTIONS Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C). Sift flour, salt, baking powder, soda, and cinnamon together in a bowl. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Ok I just looked at the recipe I have home...it is very similar but certain things were different so I'll post mine here too.
Zuchini Pie
3 cups thinly sliced zucchini 1 cup of Bisquick 1/2 cup chopped onions 1/2 cup parm cheese 2 tbl fresh parsley 1/2 tsp salt 1/2 tsp oregano 2 cloves garlic minced 4 eggs 1/2 cup oil dash of pepper
Preheat oven to 350 Grease 10" pie pan combine all ingredients in bowl and pour into pie pan bake for 1 hour
