Haha I could have written the same thing! My name is Elizabeth and I don't go by Liz but when people see that my name is Eizabeth they automatically shorten it to Liz. I hate it! Lol
Same thing with me!

Great Idea! When colleagues call me "Rache" I joke, "wow, only my closest friends call me that!" That usually does the job.

Re: how do i do this politely and professionally?
I think it's okay to nicely correct them.
More people then you think have this issue.
I've run into A TON with clients who don't go by their full names (i.e. James, prefer Jimmy, William, prefers Bill) and don't even want their full name written in their paperwork.
It's made me more mindful to ask people how they prefer to be addressed.

I thinkl you just tell them politly and professionally.
Dear Jane,
Here is the work (etc) you asked for.
And as a small side note, I do go by Lizbeth, not Liz. Just wanted to let you know for the future.
Have a great day and I lookforward to speaking with you soon.
ETA: Its keep iot light and nice. Your not saying "Your an A hole and Im mad". I think she will get the idea without being put off.
But in these situations, saying it nicely is the way to go.
this.
Still you have to say it a million times. I have a chinese last name and some take it to use my last name AS my name. Which to me is awkward.
I have run into this MANY times.
My former F/T job (I still do side work for them) I write treatment plans to bring the person onto the program.
I can't even count the number of times I received the patient record and was introduced to the client by their last name by medical or social work staff, wrote up the whole 40-some page report and was then corrected by the family that BTW.....their first name is not "Kim" or whatever was documented 80 thousand times.
And then they will even sometimes say to just leave it because they are afraid it's going to hold up getting them services.

I've tried. Over and over again and some people just don't get it. Professionally, I go by my full name, and introduce and sign everything as Patricia. No need to call me Pat.
Yup, I always get Pat as well. I don't correct anyone, I haven't had good results with that. I get "that look" if I correct them. Someone once said "Oh that's like Debbie Gibson now wants to be called DEBORAH"...
I've even been called Tish. I just live with it. I think it's endearing when people want to call you by a nickname, even if they get it wrong.

Re: how do i do this politely and professionally?
I'm so passive aggressive (not something I'm proud of) that I would just keep signing my emails "Lizbeth" and hope they catch on. If not, I'd probably just let it go. People spell my name wrong all the time...which is annoying bc it's spelled correctly RIGHT above in the email address line! Annoys me but I never really say anything.
