Grilled Vegetarian Ideas?

Okay, so that baby shower I was thinking about, has changed. It's now going to be a more casual Jack-n-Jill baby shower since mom-to-be has hinted to dad-to-be that she would like that. Now I'm thinking my original chic travel theme is a bit much if the guys are going, too. So my new theme idea is Baby-Q or BBQ or whatever. Chat Icon

Soooooooo, I've got tons of great ideas for decor and regular food for us meat eaters is easy peasy, but vegetarian options? I have no idea. I am definitely doing gourmet grilled cheese sandwiches (mom-to-be's fave) and some classed up fries served in cute little paper cones and there will be plenty of veggie apps, but I need one big veggie entree. Just one more! I thought maybe grilled vegetable skewers but that's bo-ring. Or even grilled pineapple, but I'm not sure how she feels about that. Once again, she's a super picky vegetarian- hates mushrooms, bleu cheese, most greens. Chat Icon

I'm sorry to keep asking for advice, but I'm at sea when it comes to vegetarian food, especially for a BBQ! Chat Icon

ETA: And for favors I was thinking of taking bottles of Sweet Baby Ray's BBQ sauce and making a custom label saying "Sweet Baby Riley's" since they plan to name their daughter Riley. Any thoughts? I'm open to other favor ideas, too, I just don't know what it would be....

ETA: The full list of entrees is as follows:
-Sliders
-Grilled Cheese
-Chicken Skewers
-Parmesan Fries
-Pork medallions wrapped in bacon
-Salad
-Vegetarian Option??

Should I also get things like potato salad and macaroni salad? I was also thinking of doing ribs instead of sliders? Or in addition to? My dad's ribs are kinda a big deal, lol! Everyone always expects them at our parties... It would also be easier to serve than burgers. Thoughts?

As a vegetarian, I do not find grilled vegetable kabobs boring... in fact I love them!!

You can do grilled sweet potato which is really good. (I drizzle oil and cayenne on it). or grilled eggplant with some sort of sauce, like a tzatziki. Or grilled corn.

I would make some vegetarian sides, like a pasta salad or a mozz, tomato and basil salad or something like that.

I think the veggie kabobs are a great idea! I wouldn't be bored with it, for sure.

I don't know if I would do potato salad or macaroni salad...you're already doing fries and grilled cheese, so you have potatoes and creamy covered...maybe go to tomato-basil-mozz salad, as Bayside suggested? Or make pickles! I make pickles in the summer and it's so easy and people love them :) Also, an assortment of marinated and stuffed olives would go over well.

Grilled corn is awesome. Everyone loves it. You should use a food processor to mix butter with canned chipotle peppers...it's so easy and a yummy option to give people in addition to regular butter.

Ooh chipotle pepper butter?! That sounds so good!!! I could definitely do the tomato/basil/mozz. salad. Easy peasy. I'm glad the vegetable skewers weren't as boring as I thought! That'll make it sooooooo much easier. Plus I know she'll be thrilled to bits with grilled cheese and fries. Chat Icon I was thinking the macaroni salads might be a bit overkill, I think I'm going to skip them. I just think of them as a BBQ staple, but pshhh who cares?

Hmmm I like the mac n cheese idea, but maybe I'll make my mac n cheese bites as an app. Baby daddy also suggested penne a la vodka but that seems so strange with the rest of the stuff! Or is it just me?

mac n cheese bites sound great

penne a la vodka would be good but it isn't "bbq"ish. then again, neither is grilled cheese. i say, go with what you know the guest of honor likes!
