Disney calendar/reservations

I'm hoping someone can clarify this!

Reservations for restaurants can be made 180 days in advance...

However, the park calendars are only shown 180 days in advance...

So how am I supposed to figure out a weeks' worth of restaurant reservations in advance if I can't see said week's calendar in advance (what park we do each day will be determined by extra magical hours...)? How am I supposed to know what parks we will visit M-F when I can only see up to Monday and only make a Monday reservation?

EMH are released around the same time you can book ADRs, but should be earlier. The May 2015 schedule is out now.
Not an expert at all, but it is possible for park hours to change closer to your vacation.

ETA: if the Disney website doesn't show the info, look someplace like easywdw.com or another crowd calendar. I prefer to look at their crowd calendars, but easywdw also gives links to the disney travel agent pdf.

Also, in case you didn't realize, if you are staying onsite, you can make up to 10 days of reservations when your 180 day window opens up.
