Asparagus
Any one have some good healthy ways to make Asparagus? I'm doing this nutritionists diet where I can't have oil or wine or butter so its making it hard. I made some the other day with just lemon salt and pepper..it was OK ..any one have any suggestions?

Re: Asparagus
I roast it in the oven. Since you can't use olive oil (which is what I use to roast it) can you use a teeny bit of Pam? If so, then I would lightly spray it on and then roast them with s & p. Sometimes I'll add tarragon before roasting. Or, you could steam them like you've been doing and add fresh herbs to kick it up a bit with the lemon.

Re: Asparagus
I grill mine on the BBQ with OO and S&P, however you can skip the oil and it will steam itself.

Re: Asparagus
I use a little bit of EVOO (I guess you could use pam) and sprinkle with lots of lemon pepper seasoning - either I put it on the BBQ or cook in a frying pan on low heat. YUMMM!

Re: Asparagus
I either roast, sautee or grill them with either EVOO (or i guess pam!), pepper and either fresh garlic or garlice powder, sometimes a splash of lemon juice.
I also like them sauteed with onions and black pepper.... not sure if you could do that with pam tho!

Re: Asparagus
I cut them in to 1 1/2 inch pieces and saute it with olive oil, mushrooms, and fresh garlic. Roasted cherry tomatoes also taste really good with this.

Re: Asparagus
Roast it in the oven with balsamic drizzled over and a pinch of sea salt. I also throw it on the grill like this wrapped up in foil.

Re: Asparagus
Cut them into one inch pieces. Boil water. Throw them in boiling water, then turn the water off. Remove them from water, add pepper, lemon zest and grated parm. Mix well.

This is how we make ours also, it's so good! Comes out so crunchy. DH eats half of them right off the grill before he brings them inside LOL.
