Appetizer throw down
I've been challenged to an appetizer throw down Saturday night. My first thought was PW's bacon wrapped jalapeno poppers but those don't travel as well as I would like. Then I was thinking of an avocado and feta dip I got from a friend but that's dependent on some pretty sketchy avocados lately.
The hosts are providing buffalo dip, cheese and crackers. pigs in blankets, sweet & sour meatballs, and chips and dips.
Any ideas?

a cold 7 layer nacho dip
caprese salad skewers
i dont know... it's really hard to have to make an outstanding appetizer that can withhold time and transport ...

My best app is my lollipop lamb chops.. but they are pricey and you'd have to grill them there.
You could do guacamole with home baked tortillas.
Roasted Shrimp Cocktail is a huge favorite. I use Ina's recipe.. but add lots of minced garlic before roasting.

Crab Cakes Stuffed mushrooms Spicy bacon wrapped shrimp Teriyaki sliders Potato skins Homemade hummus and pita wedges Jalapeno poppers Chicken, Rice, and Mango in Lettuce Wraps Cheddar Jalapeño Bread Any kind of pinwheel made from Pillsbury crescent rolls & some kind of cheese … or if you want to be fancy I have made Prosciutto and Gruyère Pastry Pinwheels If you can cook there, I would make coconut shrimp, its always everyone’s favorite but it’s a PIA bec you need to cook it & serve it immediately I can keep going if you want…appetizers are my favorite thing to make

I use Giada's stuffed mushrooms. Do you have a better recipe? I think I'm going to bring 2 apps. Can you give me that Prosciutto and Gruyère recipe?
They live 10 minutes away but factor in my 2 year old and we're looking at 30 minutes from oven to front door.

Believe it or not for the stuffed mushrooms I use the original better Homes & Gardens one, & everyone always loves them. It shocks me, bec it's such a simple recipe. I have it at home, if you want it i can FM later but it's really just a simple recipe.
This is great because you can do it ahead the day before even & then just cook it right before you need them & I made them once with sundried tomato, pesto and feta cheese but I like this version better (below)
Prosciutto and Gruyère Pastry Pinwheels •1 sheet frozen puff pastry (half of 17.3-ounce package), thawed •4 ounces thinly sliced prosciutto •2 tablespoons chopped fresh basil •3/4 cup (packed) finely grated Gruyère cheese (about 2 1/2 ounces) •1 egg, beaten to blend Place pastry sheet on work surface. Cut in half, forming two 9 1/2x4 3/4-inch rectangles. Arrange half of prosciutto on 1 rectangle, leaving 1/2-inch border along 1 side. Sprinkle prosciutto with half of basil, then top with half of cheese. Brush plain border with egg glaze. Starting at long side opposite border, roll up pastry jelly-roll style, pressing gently to seal long edges. Wrap in plastic. Repeat with remaining pastry, prosciutto, basil, cheese, and egg to form second log. Refrigerate until firm, at least 3 hours and up to 2 days. Position rack in center of oven and preheat to 400°F. Line 2 large baking sheets with parchment paper. Cut logs crosswise into 1/2-inch-thick rounds. Arrange rounds on prepared sheets, spacing 1 inch apart. Bake 1 sheet at a time until pastries are golden brown, about 16 minutes. Using metal spatula, transfer pastries to racks and cool slightly. Serve warm

NOT ghetto! Most of the shrimp you get at the market is previously frozen. Just don't use the cooked stuff!

mmm how do you make the lamp chops?
I put the lamb chops in a big Ziplock with lemon juice (throw the lemons in there after you squeeze them), A TON of minced garlic, fresh rosemary, a little mint, some oregano, olive oil and salt and pepper. Let them marinate. I like to do them overnight but you should do at least 2 hours.
GRILL them. They just come out better for some reason when you pop them on the grill for a couple of minutes each side until they are a nice medium rare. Tender, juicy, DELICIOUS!! I've actually converted some folks who used to hate lamb!

I make Giada's sausage and Gorgonzola stuffed mushrooms as my go to appetizer. They are different, which I love. I use baby bellas instead of full sized portabellas.

So simple and travel/reheat well.....
We make bacon wrapped artichoke hearts for parties. Our gluten free friends adore us for this one!
Literally buy canned artichoke hearts (marinated or plain) and wrap a small slice of bacon around it and secure with a toothpick. Broil until crisp and brown!
