I jumped up and down this morning when I got off the scale
That's impressive!! I would have been jumping too!!!!
I am down .5 today but I ate very late last night so I think that has something to do with it.
I may need breakfast ideas from you. Outside of eggs...what do you eat for breakfast. I guess plain yogurt with artificial sweetner. I was looking at plain yogurt yesterday though and saw that it have about 14g of sugar...I don't get that. I didn't buy it. If you can help with any ideas, I would appreciate it.

Wow! That's great!!!
I started this morning and I hope to see similar results. Started off my day with the 90 minute hot yoga class, followed by drinking 2 liters of water, then an omelet made with zucchini, red pepper, onions and 2 slices of turkey bacon. I hope to see the results that you are seeing!!!

I've been wanting to try Hot yoga and just might give it a try soon...

Stuffed Baked Tomatoes
Prep time: 10 minutes | Cook time: 10 minutes | Serves: 4 Details: This warm, cheesy side dish pairs tomato and basil with mozzarella and Parmesan cheese — a match made in heaven if there ever was one! (Phase 1)
Ingredients:
4 plum tomatoes, halved lengthwise 3 ounces shredded part-skim mozzarella cheese (1/2 cup) 1/4 cup roughly chopped fresh basil leaves 2 tablespoons freshly grated Parmesan cheese 1 garlic clove, minced Salt and freshly ground black pepper Directions:
Heat oven to 400° F. Scoop out the inside of each tomato half with a melon baller and roughly chop the scooped pulp. Combine tomato pulp, mozzarella, basil, Parmesan, garlic, and a pinch of salt and pepper. Place tomatoes, cut side up, on a baking sheet. Spoon in tomato mixture and bake until cheese is melted and lightly browned, about 10 minutes. Serve warm.

Here is my favorite dessert on SB, it tastes like a Reeses sundae:
Ingredients 1 sugar-free fudgsicle 2 tablespoons peanut butter 2-3 tablespoons Cool Whip, toppping Directions 1Place Fudgicle in a microwaveable dish and micro on low for a few (3-5) seconds, just long enough to slightly soften it. 2Remove the fudgicle from the stick into the bowl. Add the peanut butter and cool whip and stir completely. 3Cover bowl with plastic wrap and freeze for at least 1 hour. Remove and enjoy! 4Taste almost as good as the real thing! 5**You can substitute mini chocolate chips, or chopped almonds, etc for the peanut butter

Ingredients 6 slices of pre-cooked Canadian bacon 6 eggs 1/2 cup freshly grated parmesan cheese 1 teaspoon italian seasoning 1/2 teaspoon black pepper Directions 1Preheat oven to 350. 2In an x-large muffin pan, spray each muffin cup with Olive oil cooking spray. 3Place one piece of Canadian bacon in the bottom of each muffin cup 4Crack an egg over the piece of bacon in each muffin cup. Sprinkle the Italian seasoning and pepper over the egg in each muffin cup. 5Sprinkle the cheese over the egg in each muffin cup. 6Place in preheated oven and cook for 15 minutes or until the cheese is slightly brown on top.

Great for Breakfast!!!! Aside from eggs:
South beach muffin!!! Ingredients 1 large egg 1 1/2 teaspoons Splenda sugar substitute 1 teaspoon cinnamon (I use more) 2 teaspoons plain fat-free yogurt 1/2 teaspoon baking powder 3 tablespoons ground flax seeds Directions 1Spray a microwave safe ramekin or bowl with cooking spray (or use a muffin liner). 2Mix the egg and splenda until well combined (I use a fork), add the yogurt and blend well. 3Mix in the ground flaxseed, cinnamon and baking powder until well combined. 4Pour in ramekin and microwave on high for 1 minute 30 seconds (note the ramekin should be no more than half full since these do rise a lot, if it is too small they will overflow). 5These taste best served hot. Thanks so much for the recipes! I am going to make that tomato bake thing tonight! I made flaxseed muffins last night so it's funny that you posted that.
I started Sunday and I am down 1.5 lbs so far. For 2 days, that's not bad. I ran 4 miles yesterday and 4 miles today. I am trying to workout 5-6 days a week to keep it kicked into high gear.
I go to Hot Yoga on Thursday nights and then Saturday & Sunday 7:30 AM class. I like to go early when I can & get my workout done for the day, instead of having it hang over me.

Thought I'd post while sitting here at work eating the chicken salad I made today...
I used 2 cups of cut up chicken 1 tbsp lemon juice little pepper little garlic powder 1 cup of mayo 1 celery stick
It is soo yummy.

The baked tomatoes were delish! They were like bruscetta without the bread---I added a little EVOO. I had that with a wedge of egg & veggie bake & 1/4 avocado. Good dinner--I think.
Thanks for the recipe ideas. I'll be making the peanut butter cup tomorrow. I can't wait!!!

Here's another breakfast idea that tastes just like waffles, it's crazy!!!
Belgian Waffles
Ingredients:
2 large eggs 1/4 C Lowfat Ricotta Cheese (store brand) 1 T Granular Splenda, more or less to taste 1/2 t. Baking Powder 1/4 t. Cinnamon, more or less to taste (optional) Dash Nutmeg, more or less to taste (optional)
Directions:
Preheat waffle iron. If no waffle iron is available, recipe can also be used for fluffy pancakes, but that is not as much fun! Beat eggs with electric mixer on high for 1 minute to make them light and fluffy. Add all other ingredients. Beat until smooth. Spray waffle maker with PAM or other cooking spray. Pour all batter, should fill bottom tray. Close and cook as usual for waffles. __________________

Mock French Toast
4 egg whites 1 egg 1 tsp. vanilla 1/4 cup riccotta cheese dash cinnamon 1 packet of splenda I cant believe its not butter spray sugar free maple syrup
mix all together in a bowl and beat with a fork pour into pan like you would as if you were making pancakes top with butter spray and syrup and ENJOY!!! (really tasty with turkey bacon and coffee-

Mock Oatmeal
1/2 C. Ricotta 1 pkt splenda 1 egg 1 cap maple flavoring (maple extract)
Mix, cook in microwave for 3 minutes. .
I like to add some pecans or walnuts, or a dash of SF Maple Syrup - depending on my mood.

I heard the breans are unrecognizable int his recipe and just serve for the texture:
Bean Muffins
--------------------------------------------------------------------------------
1 can white beans, drained and rinsed well 3 eggs 1/2 C splenda 1/4 C sf flavored syrup or sf pancake syrup 2 T SmartBeat or Canola oil 1 T cinnamon 1 tsp vanilla extract 1 tsp baking powder
Preheat oven to 350. Mix everything in a blender or food processor (you could use a hand mixer but texture might be lumpier). Add to muffin pans sprayed with cooking spray. Bake about 30-40 min or until firm and a toothpick comes out clean. It's hard to over cook these things!
Makes 6 jumbo muffins or more smaller. They have about 125 calories a piece if using SmartBeat, canola oil will up the calories a little.
I just made mine plain and they were really tasty but you could use these flavorings as well: -1 or 2 T bannana extract with 2 T walnuts -2T maple extract with 2 T pecans -P2--zest of one lemon, 2 T lemon juice, 1/2 C blueberries (reduce sf syrup by 2T if you do this one)

Prep Time: 10 min Total Time: 3 hr 10 min Makes: 8 servings
1 container (32 oz.) plain nonfat yogurt 2 pkg. (4-serving size ea) Lemon Flavor SF Gelatin mix 1 tsp. finely grated lemon peel 1/2 tsp. ground ginger
MIX yogurt and dry gelatin in medium microwaveable bowl. Microwave on HIGH 2-1/2 min. or until gelatin is completely dissolved, stirring after 1-1/2 min. Stir in lemon peel and ginger. POUR into 9-inch pie plate sprayed with cooking spray. REFRIGERATE 3 hours or until set. Store leftover pie in refrigerator. ------------------------

Ricotta Muffins Heat oven to 400, spray a muffin pan. Then, mix 2 cups ricotta (part skim has less sugar), 4 eggs, 6-8 packs splenda (depending on how sweet you prefer) and vanilla extract to taste. Mix the ingredients and pour into muffin tin. Bake 20- 30 min or more until toothpick comes out clean.
I put them in tupperware and heat up two of them for breakfast. This really helps break up the egg routine.
you can add pumpkin spice or unsweetened cocoa and cinnamin.

Breakfast Supreme Casserole (from Allrecipes) 12 servings
Ingredients: 1 pound turkey sausage (I used about 3/4# mild Italian poultry sausage) 1 pound lean ground beef (or other lean ground meat) 1 small onion, chopped 3/4 cup (or more) sliced fresh mushrooms 1/2 cup (or more) chopped green pepper (I used a whole red pepper) 1 teaspoon salt (I omitted) 1/4 teaspoon pepper 2 tablespoons I Can't Believe It's Not Butter spray or Smart Balance, melted 2 cups shredded reduced-fat or FF Cheddar cheese, divided (I used about 1.5 cups) 12 eggs 2/3 cup fat-free half and half (this for 12 servings so I figured that I'd keep it as we are allotted 2T/day)
Directions: 1. In a large skillet, cook the sausage, beef, onion, mushrooms and green pepper over medium heat until meat is no longer pink; drain. Stir in salt and pepper; set aside. 2. Pour butter substitute into an ungreased 13-in. x 9-in. x 2-in. baking dish. sprinkle with 1 cup cheese. beat eggs; pour over cheese. Top with sausage mixture. Pour the cream over sausage mixture. Sprinkle with remaining cheese. Cover and refrigerate for 8 hours or overnight. 3. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325 degrees F for 35-40 minutes or until set. Let stand for 10 minutes before cutting.

I found this on a low carb message board...I haven't tried it but they were saying that this tasted like a danish. I am going to try it tonight..
1/2 C. part skim ricotta cheese 1 egg, well beaten 1 pkt splenda 1 pkt stevia plus heaping dash of cinnamon 1 tsp of vanilla
Mix ricotta into the egg, blending well. Add sweetners and cinnamon and vanilla. Pour into a 6 oz ramiken sprayed with butter flavor Pam.
Cover with wax paper and microwave about 3 minutes on 60% power; rotate dish a quarter turn and microwave another 2-3 minutes on 80% power(times may vary). Invert onto plate and top with a little butter and your favorite sf Davinci syrup...(french vanilla was yummy)
