Allergy moms - please read, need some advice! - Update in OP
James is allergic to eggs but at a recent scratch test, his skin was negative. We have to go through a blood-test and a food challenge before we can determine if his allergy is truly gone. (just a little backstory)
Yesterday, he had a PB&J sandwhich for lunch. While he was still eating it, he started having an allergic reaction. He got tiny hives all over his face and developed beet-red blotches all over his face and behind his ears. Poor kid just kept scratching his face and nose saying "itchy itchy itchy"  Nothing that I gave him yesterday had any egg in it. I'm hyper-vigilant about what he eats. We gave him Benadryl right away and called the peds emergency line. We wre just told to monitor his airway and if necessary to use the epi-pen which we have for his egg allergy. The hives and splotches went away about 3 hours after taking the Benadryl.
He's had peanut butter before, could this be a reaction to it? I know that a reaction can occur after several exposures. I'm bringing the packaging all of the components of his lunch from yesterday to the allergist as soon as we can get an appointment. In the meantime, I'll steer clear of peanut products.
Any thoughts?

I took James to the allergist this morning and his skin test came back negative for peanuts, thankfully! The allergist doesn't know what happened to cause the reaction, though.

Well I would say it could - either be cross contamination or a new allergy.
DD did not have any food allergies that we were aware of in the past. One morning she woke up covered head to toe in hives and facial swelling (she even had hives in her eye lashes). Anyways - after an elimination diet - we found out (prick test and blood work) that she is allergic to shrimp, crab, milk, oranges, strawberries and chocolate. She has been eating all of the above except the shellfish numerous times in the past.
Both DH and my father both developed food allergies suddenly. If you already have a tendency to food allergies you can always get new ones and sometimes outgrow others.
I would avoid peanuts until you can get it tested.

Christine, I was actually going to FM you about this because I know how much you went through with your DD! I'm calling his allergist in the morning (who do you see, by the way?) and I hope I can get him in before school starts on Thursday. He's going to a new daycare, so I want to have as many answers as possible before then.

YES allergies can definitely develop after repeated exposure.
Loey had tried MANY different tree nut products, like almond butter, rainbow cookies (with almond paste), walnuts, etc.
Then one day he had a reaction while eating sugar cookies that I made with almond extract. When I had him tested, it turns out he is allergic to tree nuts (along with sesame, which we had tested previously).
They also told us to avoid ALL nuts in hopes that he won't develop an allergy to peanuts and that he will outgrow the tree nut allergy.

Thanks Hayley! I'm petrified of him actually being allergic to peanuts. 
My Dh is doubting it because it happened about a half hour after we got to my aunts house (we were evacuated from our own). He thinks it was something environmental even though she has no pets and he has been there so many times in the past. It's just a strange coincidence that he started with the reaction as he was eating his sandwich.

I wish you the best of luck figuring it out. I am proof that allergies can develop. I was not allergic to any food until I gave birth to my son. I am now allergic to bananas, kiwis, avocados and all adhesives (e.g. band aids, surgical tapes, some stickers). DS is also allergic to these things but he is only sensitive to adhesives. I now blister and bleed from them.

My son tested pos to peanut, then neagtive. I still kept him away but DH thought I was being overprotective, so we gave him some PB crackers. He was fine. Then a sandwich and he broke out in hives. next time he was tested he tested positive! I would keep him away from PB and keep your epi pen handy. My kids eat sunflower seed butter.
