how to book flights for multiple cities in Europe?
What is the best way to book flights if we want to stop in multiple cities in Europe? And fly home from a different city than we originally arrive in?
Is there an easy way for me to do this online by myself or do I need a travel agent?

My information may be terribly outdated as it's been a few years since I've been abroad (sigh... damn kids! ) but we used to do what you describe ALL the time, fly into one city and out another. I always did it by myself researching flights on the major travel websites and then booking it directly on the airline's website. For intra-Europe flight I always had the most luck booking with the many discount European carriers on their websites.

If you are looking on Delta.com, you just choose "multi-city" instead of round trip. I'm sure other sites have a similar option.

This is how I do it as well. For inter-Europe flights, look at Ryan Air and Easy Jet.

I use kayak to search. You click multi city. It gives you the best pricing using multiple airlines.
