No, my kids loved AK. We went twice! The safari alone was worth the trip for my animal lovers (ages 2 and 5). The shows were fantastic. They loved the Dino land area too.
We were in Disney over Hurricane Sandy and Halloween so it wasn't that busy. I can see how being there during peak times would be cumbersome. Especially with little ones in strollers. We skipped Epcot because we figured they'd get more out of it when they are older.

Re: Would you SKIP Disney's Animal Kingdom?
We ended up going last Tuesday, on our travel home day. We stayed about 3 hours and that was enough for me! My kids enjoyed it though, and that's what is really important. We did the safari, tough to be a bug show, finding nemo show, played in the boneyard twice, and went on the scary dinosaur ride, which my DD loved for some strange reason lol.
All of the previous times we were there they still had "little red" as part of the safari, and the poachers, etc. I was disappointed that they took that whole part out!
