Anyone make sausage and peppers?

If you make sausage and peppers on a skillet, do you slice the sausage first and then brown it? I read somewhere that if you do that, the casings could come loose and this person recommended browing the sausage whole and then slicing it? Any thoughts or recommendations? Thanks!

I boil them part of the way, then cut them and add cook with a little sauce. Then add peppers.

My exH used to like spicy sausage and I liked sweet. I cut his in 1/3 straight and I cut the sweet ones on an angle so we could tell them apart when they were covered in sauce.

yes, it is harder to slice them, then brown them. I cook the sausages (I usually use a skillet or indoor grill) and brown them all around the outside. Then I cut them. Or sometimes I sort of brown them but not fully cook, and then slice them and brown them that way. I wouldn't recommend cutting them while raw/uncooked. Either after they are cooked fully or at least halfway and then cooking it the rest of the way sliced.

I ususally boil the sausage in some shallow (not covering it) water. Once that is all absorbed the sausage is usually cooked through enough to cut it, and then brown.

No, they dry out and loose all their flavors and juices. I put them in a pain with water, maybe a half inch of water and cover until water is gone. Then brown them and leave them whole until Im ready to serve them. Then I cut them.

I brown them first so they are cooked almost all the way through, take them out of the pan, and let them rest while I saute the peppers and onions and garlic. Then when those are just about done, I slice the sausages on an angle and add them to the pan to finish cooking.

I have poached them, which works fine, but I prefer when the casings are browned.

I use a grill pan for mine or the bbq.

I grill them until they are browned and you can see some of the juices seeping out, then I cut them diagonally and add them back into the already sauteed peppers and onions. And let them cook in there for another 10 to 15 minutes. I never add sauce to my sausage and peppers. I only use olive oil, garlic and worcestershire sauce.

I brown them first, slice them and add to the peppers while sauteing so that the flavors blend.

I brown the links whole for a bit then I slice them and brown the slices. My sausage and peppers kicks a$$!!! .......it's sooooooo good!!!

Thanks everyone. Based on the responses, I will brown them whole, take them out, fry the onions and peppes and then slice up the sausages and add them back to the mix.

I cut after they are cooked. The meat on a fresh sausage is soft and the knife often presses into it before cutting it so sometimes you lose meat out of the casing - but more to the point it's just a messier and more difficult method of cutting.

brown, cut, cook until all slices are browned. I prefer sausage, potato, onion to sausage and peppers..so much better IMO
