Does anyone cook on Sundays for the week?
I've been doing this the past month. It take a bit of organizing and planning but it frees my time up to workout and focus on my kids evening routine (homework, sibling rivalry lol, showers, etc). It also saves me money.
Now I'm finding if I don't do this, I'm lost!
Just wondering what kinds of meals you prepare if you do this. And, how many meals? It's just me and 2 small kids, so I don't need more than 3. The other days we do quicker things like quesadillas.

Dh and i try to do the weekly shopping on sun. I've started baking whole grain muffins sunday night and we eat them for a few days for breakfast! Def saves time and money. We're not organized enough to do whole meals

Now that I think about it, maybe I'm sort of "forced" to do this as a single mom with 2 school- aged kids who have told me they appreciate my home-made meals to take out. Plus I'm on a budget and trying to eat fairly healthy!

We do!
I started once I went back to work because I didn't want us to eat take-out all the time and I wanted to at least feel like we're still eating fairly healthy. Like you, if I don't do it, we're kinda lost during the week. I do a lot of bulk cooking now, so that I always have something in the freezer for quick meals or when we're in a pinch. I sit down on Wednesdays or Thursdays usually and plan out a menu for the week.

I don't exactly cook for the week, but I rarely cooked during the week when I was working. I usually made an extra meal or two on weekends and cooked extra of any meal I could. My freezer is always stocked with meals that I can thaw overnight and then quickly reheat for a homemade meal in minutes.
On weekends, I usually throw one meal in the crockpot and then cook a second meal for dinner and leftovers. I do a lot of chili, shredded chicken (lime, bbq, buffalo, etc), pot roast, stews in the crockpot. If I make meatloaf, I usually make 2 or 3 to freeze. I also freeze extra with lasagna, casseroles, meat sauce, etc. Another quick idea is english muffin pizzas. I assemble one package worth of muffins in a few minutes, do a quick freeze on a sheet pan, and then store in freezer bags.
BTW, I highly recommend a foodsaver to vacuum seal meals and leftovers. They keep longer and come out so fresh.

I do. I have too, no way to get food on the table during the week. Some items I make regularly.
Sauce - meat, bolognese, a la vodka, alfredo sauce
Meatballs, individual meatloaf
Brown rice - make a huge batch and divide it up into serving sizes and freeze them.
chicken cutlets
raviolli
bread
curry chicken
mashed potatoes
hamburgers
a number of chicken dishes
shepards pie.
I usually freeze a lot of the items and keep out the next day or two of food in the fridge.

I do it once in a while & when I do it's the only time I'm not stressed for the week or eating late at night.

Sometimes I'll cook a few things on Sunday so I can just reheat during the week. I don't do it every weekend though.

I don't freeze mash potatoes, I usually eat them first. But for the others, like rice, I actually pop in the microwave for two minutes. For the sauces I would let it soak in warm water and then heat in pan or microwave. Meats, if I remember will take out the night before and then heat in oven or toaster oven. If I forget to take it out of the freezer I would just put in oven and extend the cooking time a bit to defrost and then cook. Pasta I usually leave on the counter for 30 minutes, enough to pull pieces apart and dump in boiling water to cook.

I do!
I usually cook 1-2 things on Sunday (but anything I cook, I make enough to last 2 nights). The other nights, I make things that are quick and easy (pizza, fish, tacos, etc.).
In the winter, I make a lot of soups, chili, casseroles, etc.
Right now, I make lasagna rolls, pasta dishes, etc. I have actually been a little lazy the past few weeks, and it definitely makes the weeks so much harder when I am scrambling for dinner.
