For those moms who cook for the week....
What kind of meals do you make?
Do you freeze them and reheat or do you leave them in the refrig and nuke them? I really want to try to cook a few meals on Sat/Sun but I'm not sure what holds up well. DH really doesn't like leftovers so I ma hoping that reheating things won't seem like we are eating leftovers.
Any advice would be helpful! Thanks!

I need to start doing this too. Two things that I have done and that I think come out great are baked ziti (I put it all together in small metal baking tins and freeze it). I take it out of the freezer and bake it and it tastes perfectly fresh. I add spinach so there is a veggie in there too.
Meatballs are also great. I make a big batch and cook some the day of and freeze the rest. I put them on a cookie sheet so they harden and then I put them in a ziploc bag in the freezer. On a busy night I make sauce and plop them right in - come out great.
ETA: soups/chili is great too. Ive frozen chicken soup, escarole/white bean soup, curried cauliflower soup, lentil soup

Things that reheat well:
Meatballs & Sauce - just boil macaroni day of Lasagna or Baked Ziti - have extra sauce on the side in case it dries a bit in the oven Steak Pizzaoila - again, boil spaghetti day of Chili or Taco's --- make rice day of Enchilata's or Mexican Lasagna Roasted Chicken -- good for 2 meals. One to eat as roasted chicken, then pick something else during the week to do with the leftovers (soup, fajita's, stir fry, etc...) Soups - boil pasta seperate, put in ziplock and add day of when you reheat - can serve with grilled cheese or a salad Chicken Cordon Blu w/ Mashed Potatoes - make a few days in advance. I usually make 10 breasts and freeze at least 5 or 6. Stew over noodles - boil noodles day of

What about a Crock Pot meal? Often I just put everything in the crock the night before, in the AM i take it out of the refrigerator and set it. The meal is done in 8hrs and the only thing I have to do is serve it. The other good thing...there are always leftovers!
