I want to make homemade Mac and cheese does anyone have a yummy recipe? I usually always eat Kraft. Tia

I like Martha Stewarts but I change the cheeses and usually the milks (i.e. 1 or 2%)

make this for holidays, etc. Everyone LOVES it. I do a few things though to alter the recipe. I usually use sharp cheddar and mild cheddar, not American (simply b/c I usually don't find American Shredded cheese and can't be bothered shredding my own).

This recipe calls for onion and it adds such an amazing flavor. Sort of gives it a white castle oniony taste if you know what I mean...You could omit the onion if you don't like onion. Dh prefers less oniony taste, so I use half the onion they recommend (unless you like REALLY oniony flavored things). And I take about 4 to 6 slices of white bread and dry it out to make bread crumbs (a day or two before), and toss the breadcrumbs in melted butter and salt and spread them on the mac and cheese before you bake it. I keep it covered halfway through cooking time then uncover for the rest of the cooking time. The mac and cheese has a buttery crumby coatin on top. People LOVE it!

Better Homes and Gardens Best Loved Mac and Cheese

2 cups dried elbow macaroni (8 ounces)
1/2 cup chopped onion (1 medium)
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/8 teaspoon black pepper
2-1/2 cups milk
1-1/2 cups shredded cheddar cheese (6 ounces)
1-1/2 cups shredded American cheese (6 ounces)

Directions
1. Cook macaroni according to package directions. Drain; set aside.

2. Meanwhile, for cheese sauce, in a medium saucepan cook onion in hot butter until tender. Stir in flour and pepper. Add milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. Add cheeses, stirring until melted. Stir in cooked macaroni. Transfer mixture to a 2-quart casserole.

3. Bake, uncovered, in a 350 degree F oven for 25 to 30 minutes or until bubbly and heated through. Let stand for 10 minutes before serving.

4. Makes 4 servings

5. Saucepan Macaroni and Cheese: Prepare as above, except reduce milk to 2 cups. After draining macaroni, immediately return macaroni to the saucepan. Pour cheese sauce over macaroni; stir to coat macaroni with sauce. Cook over low heat for 2 to 3 minutes or until heated through, stirring frequently. Let stand for 10 minutes before serving.

Morton's steak house has an AWESOME mac n cheese, I got it last time we went and then I looked up the recipe online, just google it, its really yummy!

I have made this one a bunch of times - and I also have made it in popover pan & served them as individual 'bites'
For topping
•1/2 stick unsalted butter
•2 cups panko (coarse Japanese bread crumbs) or 3 cups coarse fresh bread crumbs (from 6 slices firm white sandwich bread)
•1/4 pound coarsely grated extra-sharp Cheddar (1 1/2 cups)
•1/2 cup grated Parmigiano-Reggiano

For macaroni and sauce
•1 stick unsalted butter
•6 tablespoons all-purpose flour
•5 cups whole milk
•1 pound coarsely grated extra-sharp Cheddar (6 cups)
•1/2 cup grated Parmigiano-Reggiano
•1 pound elbow macaroni
Make topping:
Preheat oven to 400°F with rack in middle.
Melt butter, then stir together with panko and topping cheeses in a bowl until combined well.
Make sauce:
Melt butter in a heavy medium saucepan over medium-low heat and stir in flour. Cook roux, stirring, 3 minutes, then whisk in milk. Bring sauce to a boil, whisking constantly, then simmer, whisking occasionally, 3 minutes. Stir in cheeses, 2 teaspoons salt, and 1/2 teaspoon pepper until smooth. Remove from heat and cover surface of sauce with wax paper.
Make Macaroni:
Cook macaroni in a pasta pot of boiling salted water (2 tablespoons salt for 4 quarts water) until al dente. Reserve 1 cup cooking water and drain macaroni in a colander. Stir together macaroni, reserved cooking water, and sauce in a large bowl. Transfer to 2 buttered 2-quart shallow baking dishes.
Sprinkle topping evenly over macaroni and bake until golden and bubbling, 20 to 25 minutes

we love it... i put my own twist on it (romano cheese, other cheese, and i don't use the egg)... but here is the recipe!
Ingredients

* 1/2 pound elbow macaroni
* 3 tablespoons butter
* 3 tablespoons flour
* 1 tablespoon powdered mustard
* 3 cups milk
* 1/2 cup yellow onion, finely diced
* 1 bay leaf
* 1/2 teaspoon paprika
* 1 large egg
* 12 ounces sharp cheddar, shredded
* 1 teaspoon kosher salt
* Fresh black pepper

Topping:

* 3 tablespoons butter
* 1 cup panko bread crumbs

Directions

Preheat oven to 350 degrees F.

In a large pot of boiling, salted water cook the pasta to al dente.

While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.

Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.

Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

Remember to save leftovers for fried Macaroni and Cheese.
