Bruschetta...
Something so simple, but I've noticed everyone makes it a little differently. So... How do you make yours?

I buy the big container at Costco and put it on the chicken It's delish!

Really ripe tomatoes, seeded and most of the juice drained...chop them up.
Fresh basil, leaves torn up.
Fresh ground pepper, a sprinkle of salt, a little crushed red pepper flakes.
That's it! I hate onions, so none are in mine.
I toast thin slices of semolina bread in the toaster oven and rub a garlic clove (cut in half so you get lots of flavor) on the toasted bread slices, then top them with the tomato mixture.

I love raw tomatoes, but Ive realized not everyone does. I actually made a roasted bruschetta for christmas eve very good & used left overs over pasta!

Diced roma tomatoes (seeded), diced white onion (small amt.), fresh minced garlic, olive oil, a touch of balsamic, salt, pepper, a few shakes of italian seasoning, and fresh parmasean cheese.

I love it this way (with onions) without the olive oil!

Sautee garlic in olive oil add 2 cans diced tomatoes with seasonings and artichoke hearts. Simmer for 15 minutes. Add some breadcrumbs to thicken.
