Re: Seafood recipes
I just made this this week, DH loved it:
Sweet soy salmon: Salmon filets soy sauce 2 tbs born sugar juice of half a lemon chopped garlic EVOO black pepper
I mixed it all together and marinated it for a couple hours, then cooked in on a grill pan.
Cajun Grilled Tilapia: brush with EVOO then spinkle with cajun seasong and old bay and grill (or use grill pan)
Oreganata (sole, flounder, shrimp, tilapia): few cloves of garlic lemon juince EVOO bread crumbs oregano crushed red pepper black pepper
lay fish in baking dish. combine ingredients above and put over fish. then our some white wine in dish and add some butter around the fish. Bake.
sorry... i don't measure when i cook!

Re: Seafood recipes
DS LOVES "fish nuggets" - aka scallops just cooked in butter/evoo and garlic, or breaded and fried.
He also LOVES salmon and salmon burgers. I usually buy enough for 2 meals. First night just marinated (terriaki/soy/garlic/whatever). Then I grill on stove. 2nd night I make salmon burgers - flake the leftover fish, egg, breadcrumbs, lots of grated garlic, zest and juice of a lemon, fresh basil/tyme if I have or a few shakes of dried. I cook them on the stove too - just to reheat/cook egg. If you let them sit for a few mins in the fridge they firm up and don't fall apart.
I do different white fishes with old bay, zest/juice of a lemon, grated garlic and melted butter. I add capers to mine (DS doesn't like olives).
