Re: Best mashed potatoes...
Mine are completely fattening. But oh so good.
I normally boil about 5-6 red potaotes with the skin on until soft. Keep the skin on. I toss in a stick of butter, some milk and salt and pepper. Mix with hand mixer.
For garlic ones, i do the same thing and grind in organic garlic. I ve made them with shredded cheese just mixed in with everything else, again not light for a diet, but totally worth the calories.

Same. If I'm particularly well-stocked I use evaporated skim milk (in the can) or fat-free half and half instead of milk. I find that I do the butter first and then the milk after, it comes out creamier.

Re: Best mashed potatoes...
I like to melt the butter before stirring it in, whole milk and a little mayo. For garlic mashed, I LOVE using roasted garlic. You just slice the top off of an entire bulb or garlic, drizzle some olive oil over, and bake at 450 in loose tin foil for about 1/2 hour til it browns. The garlic will push right out of the skin, and you can add as much as you want into the potatoes. It's absolutely amazing!
