I usually dice up tomato, purple onion and good seasoning dressing. Mix it all together and let it marinate. Then I usually serve with toasted italian bread slices. Its always a hit and none leftover

I use
diced tomatoes
diced red onion
diced fresh mozzarella
fresh basil chopped
EVOO
Red Wine Vinegar
Salt
Pepper
combine everything in a bowl and season to taste.
Spoon onto toasted baguette
Sometimes I'll add some pesto and chopped garlic for a different spin

chopped, seeded plum tomatoes
chopped red onion
chopped basil
chopped garlic
black pepper
EVOO
coupld splashes red wine vinegar
salt
best if it gets to sit a few hours!
