Wine experts- am I storing my opened wine wrong?

This is in regards to white wine.
After I open a bottle, I will put the cork back in and store it in the fridge. I have a little shelf in there that I think is meant to hold a wine bottle.

My issue is this. I feel llike when I first open a bottle of wine it tastes great and I love it.
But after storing it in the fridge, the next glass doesn't taste the same.
And I don't mean storing it for weeks- just a day or 2 later I find this.

It's almost like all the wines start to taste the same after being stored in the fridge- they get the same odd taste to them.
Whether it be a Pinot Grigio, a Riesling, a Savingnon Blanc- what have you. They all start to taste the same- almost like I am tasting the alcohol more.

I dont even know if this makes sense but I feel like I love that first, just opened bottle glass but after that it's down hill from there.

Does it have to do with how I'm storing it? Too cold? Am I not storing opened wine correctly?

try storing the bottle horizontally.. the wine must touch the cork..

I noticed this to! I toss the wine if i dont finish it after a day. I dont think there is anything to do to keep it fresh. Unless check like wineenthusiast.com or a site like that where they may sell stuff that keeps your wine fresh 1 or 2 days after

My husband has some sort of wine preserver by Houdini I believe. Something about pumping the oxygen out?!

Yep - definitely get one of those wine preservers. Thats how I keep my white wine tasting great on the second night....if it makes it that long. Chat Icon

I agree with the wine pump and also the wine should be laying down because um I really don't know but I remember reading it in wine books.

Wine needs to aerate to come to it's full flavor, which is why they sell the aerators or decanters. But too much oxygen destroys the taste of the wine. One of the oxygen pumps will def help!

I usually only store it with the original cork for 1 day and the taste does suffer a bit.

Wine never lingers for more than a day around here so I haven't invested in one of the vacuum pumps yet. Chat Icon

You only have to store wine lying down prior to opening it and that's so the cork doesn't dry out. Once it's open, I would recommend a rubber stopper rather than putting the cork back in.

The problem with putting white wine in a regular refrigerator is that it's too cold. When white wines are too cold, it takes away from the taste.

Next time you take the wine out of the frig, pour a glass and let it sit at room temp for about 15 min. I'm sure you will notice a difference.

I have a wine saver that keeps it fresh longer. I got mine at khols for $10. Its a rubber cork and a pump. Works great.

Is your fridge too cold? Are you drinking it too cold? It could definitely alter the taste.

I have this wine preserver and it works really well. It pulls out all the air and it comes with 2 special tops. So you put the rubber top one, use the tool to put the air out and the take the tool off. When you go to use it you just take the rubber top off and can do it again. It always tastes the same.

I just pump the air out and store back in the wine fridge.
